Chiacchiere with Nutella.
Simple, full of bubbles, super delicious.
Chiacchiere with Nutella are traditional carnival sweets, very easy to make, crunchy and fragrant, very aromatic and extremely tasty, with all those bubbles they will conquer you on the first taste, this version is even more delicious because enriched with Nutella.

Ingredients
- 3 eggs
- 3 ¼ cups Manitoba flour
- 1 ½ tbsp butter
- cup dry white wine (or rum, limoncello, grappa, etc…)
- grated peel of one untreated lemon
- 2 tbsp sugar
- 1 tsp vanilla extract
- 1 pinch salt
- as needed peanut oil
- as needed powdered sugar
- as needed Nutella®

- 1 Stand Mixer
- 1 Rolling Pin
- 1 Pasta Machine
- 1 Pastry Wheel
Steps
Beat the eggs with the salt and sugar with a fork until small bubbles form.
Sift the Manitoba flour and pour it onto a rolling pin, make a well in the center where you will insert the softened butter, the previously beaten eggs, the grated lemon peel, the white wine, and the vanilla, start kneading with a fork, as soon as all the liquids are incorporated knead by hand for a few minutes until you obtain a smooth, homogeneous dough that does not stick to your hands (if needed, add more flour or white wine, it depends on the humidity of the flour).
Once kneaded, let it rest for 10 minutes at room temperature.
You can also prepare the dough in the stand mixer with the K-beater and then transfer it to the rolling pin and finish it by hand.Take the dough and divide it into 4 or 5 parts.
On a very lightly floured rolling pin, roll out one piece at a time into a very thin sheet (the more the sheet is worked until it becomes thin, the more bubbly they will be, I used the pasta machine and rolled the dough through the rollers at least twice on the same number and then reduced the numbers until reaching the penultimate notch, the thinnest one), cut the chiacchiere with a fluted pastry wheel forming small rectangles about 2 cm wide, make 1 or 2 parallel cuts in the center of each rectangle. You can also cut them into triangles, squares, or as you prefer.
Place them one by one on a slightly floured tea towel.
Prepare all the chiacchiere in the same way.Heat abundant oil in a saucepan.
Fry the chiacchiere in hot oil (338°F), turning them over as soon as they are lightly golden (be careful not to burn them, they cook very quickly), let them dry on a tray with kitchen paper.
Once cold, place them on 2 trays and sprinkle with powdered sugar.Melt some Nutella in a bain-marie and use a spoon to drizzle it over the chiacchiere.

Add the flour and the grated lemon peel 4 minutesKnead.
Transfer the dough onto a floured rolling pin and work it for a few minutes until you get a smooth, homogeneous dough that does not stick to your hands (if needed, add more flour or milk, it depends on the humidity of the flour).
Let it rest for 10 minutes at room temperature.
Fry and decorate the chiacchiere as indicated above.
