Chocolate and Fig Cake.

Simple, quick, and delicious.

The chocolate and fig cake is an easy dessert to prepare. Just mix it, put it in the mold, and then straight into the oven for a soft, fragrant, and very delicious cake thanks to the combination of chocolate and figs that makes it special and uniquely good. Try it, it’s perfect for the whole family and will win you over at the first bite 🙂

Ingredients

  • 4 large eggs
  • 2 1/4 cups all-purpose flour
  • 1/3 cup potato starch
  • 1/3 cup unsweetened cocoa powder
  • 1 container whole yogurt (4.4 oz, I used vanilla-flavored)
  • 1 cup sugar
  • 2/3 cup corn oil
  • 1 vanilla extract
  • 1 shot glass rum
  • 1 packet baking powder
  • 1 pinch salt
  • 13 figs

Tools

  • 1 Stand Mixer stand mixer
  • 1 Baking Pan baking pan
  • 1 Spatula spatula

Steps

  • Butter a 9.5 inch cake pan.

    Rinse the figs, remove the stem, and cut them in half if small or into 4 parts if larger.

    In the stand mixer bowl or with electric beaters, whip the eggs with the sugar, vanilla extract, and a pinch of salt. Once the mixture becomes fluffy, add the oil, yogurt, and liquor while mixing.

    Preheat the oven to 338°F.

    Sift together the flour, cocoa powder, potato starch, and baking powder and mix them.

    Gradually add the flour mixture to the egg mixture, continuing to mix.

    Pour half of the batter into the pan, arrange half of the figs on the surface, cover with the remaining batter, and decorate the surface with the remaining figs. Bake for about 55 minutes at 338°F. After the time, check the doneness in the center with a wooden skewer; it should come out dry.

    Once the chocolate and fig cake is baked, remove it from the oven and let it cool, then take it out of the pan and place it on a tray.

  • Thermomix Version:

    Butter a 9.5inch cake pan.

    Rinse the figs, remove the stem, and cut them in half if small or into 4 parts if larger.

    Put the eggs with a pinch of salt and sugar in the mixing bowl for 30 sec./speed 5.

    Add the oil, vanilla essence, yogurt, and liquor for 20 sec. / speed 3.

    Preheat the oven to 338°F.

    Sift together the flour, cocoa powder, potato starch, and baking powder and mix them.

    Add the flour mixture through the lid opening with the blades running at speed 3. Once all the flour is incorporated, let it run for 10 sec / speed 3.
