Ingredients

Base:

  • 4 medium eggs
  • 1 1/4 cups all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 3/4 cup sugar
  • 7 oz ricotta
  • 1/3 cup corn oil
  • 1 packet baking powder
  • 1 pinch salt
  • 1 vial vanilla flavoring
  • 7 oz heavy cream
  • 7 oz 55% dark chocolate (you can also mix dark and milk chocolate)
  • 2 tbsps butter (or 2 tablespoons corn oil)

Tools

  • 1 Stand Mixer
  • 1 Spatula
  • 1 Cake Pan
  • 1 Oven

Steps

  • First, butter a 1011 inch pan.


    Preheat the oven to 340°F.


    In the stand mixer or with electric beaters, beat the eggs with the sugar and a pinch of salt until it becomes a fluffy and frothy mixture.


    Add the ricotta, oil, and vanilla flavoring to the egg mixture little by little, continuing to beat with the beaters.


    Sift the flour with the cocoa and baking powder, mix the dry ingredients together, and add the mixture slowly to the eggs.


    Pour the batter into the buttered pan and bake in a preheated oven at 340°F for about 35 minutes, always check the doneness with a skewer in the center.


    Turn the cake over onto a platter and let it cool.

  • Once the base is cool, prepare the glaze.


    Chop the chocolate.


    Put the cream and butter in a saucepan over low heat.


    Add the chocolate to the cream, let it melt over very low heat, stirring often, once the mixture is well melted, smooth, and homogeneous, turn off the heat and let it cool for about 10 minutes, stirring occasionally.

    Pour the glaze over the cake and spread it with the help of a spatula.


    Let it sit for an hour at room temperature.


    The chocolate glazed cake is ready to be enjoyed.

  • First, butter a 1011 inch pan.

    Preheat the oven to 340°F.

    Put the eggs, with a pinch of salt and the sugar in the bowl 50 seconds/speed 5.


    Add the oil, vanilla, and ricotta 30 sec/speed 2.


    Add the cocoa, flour, and baking powder 30 seconds/speed 5.


    Pour the mixture into the buttered pan.


    Bake in a preheated oven at 340°F for about 25 minutes, do the toothpick test.


    Turn the cake over onto a platter and let it cool.

  • Glaze:


    Once the base is cool, prepare the glaze.


    In the clean bowl, put the cream and butter heat 4 minutes/158°F/speed 2.


    Add the chopped chocolate 1 minute/speed 4.

    Pour the glaze into a bowl and let it cool for about 10 minutes, stirring occasionally.


    Pour the glaze over the cake and spread it with the help of a spatula.


    Let it sit for an hour at room temperature.
