Chocolate Muffins are very simple to prepare, quick, and extremely delicious; imagine a super soft little cake with lots of chocolate chips inside, pure indulgence!

Try them, they are perfect for the whole family and will make both adults and especially kids happy 😊

Ingredients

  • 3 large eggs (at room temperature)
  • 1/2 cup cup plain white yogurt (at room temperature)
  • 1 3/4 cups cup all-purpose flour
  • 2/3 cup cup sugar (2/5 cup for a less sweet version)
  • 1/2 cup cup unsweetened cocoa powder
  • 1/2 cup cup corn oil
  • 1 packet baking powder (16 g)
  • 1 teaspoon vanilla essence
  • 1 cup cup chocolate chips

Tools

  • 1 Electric Whisk
  • Muffin Paper Cups
  • 1 Oven

Steps

  • In the mixer or with electric whisks in a bowl, beat the eggs with sugar.


    Mix the flour with the cocoa and the baking powder, all sifted.


    Add the yogurt, vanilla, and oil to the egg mixture and continue mixing with a spatula until everything is homogeneous.

  • Add the flour mixture to the liquid mixture and quickly mix with a spatula.


    Add the chocolate chips, mix to incorporate them into the batter.

    Turn on the oven to 320°F static.

  • Place the paper muffin cups on the baking tray.


    With a ladle, pour the mixture into the paper cups, leaving 3/5 inch from the edge.


    Bake at 320°F in preheated oven for about 20 – 25 minutes, check the cooking with a toothpick in the center, it should come out dry, at this point remove from the oven and let cool.

    The chocolate muffins are ready to be enjoyed.

  • Put the eggs and sugar into the mixing bowl for 1 minute/speed 3.

    Add the yogurt and oil for 40 sec./speed 3.


    In a bowl, mix the flour with the cocoa and baking powder, all sifted.

  • Add the flour mixture to the egg mixture in the mixing bowl for 30 sec/speed 3.

    Turn off the Bimby and use a spatula.

    Add the chocolate chips, mix to incorporate them into the batter.

    Turn on the oven to 320°F static.

  • Place the paper muffin cups on the baking tray.

    With a ladle, pour the mixture into the paper cups, leaving 3/5 inch from the edge.

    Bake at 320°F in preheated oven for about 20 – 25 minutes, check the cooking with a toothpick in the center, it should come out dry, at this point remove from the oven and let cool.
