Chocolate Salami with Ricotta (without raw eggs).
Simple, quick, delicious.
The chocolate salami with ricotta is a very simple dessert to prepare, quick and tasty, without raw eggs or butter. Instead, it contains ricotta, which makes it much lighter, softer, perfect for slicing, and delicate and tasty on the palate. The rum gives it a special aroma and scent (if you don’t prefer it or there are children, you can omit it or replace it with a few drops of flavoring).

Ingredients
- 8.8 oz dry cookies (other types of cookies are also fine)
- 3.5 oz chopped hazelnuts
- 8.8 oz ricotta
- 8.8 oz dark chocolate
- 4 tbsp unsweetened cocoa powder
- 3.5 oz sugar
- 2 tsp rum (you can omit it)
- as needed powdered sugar

Steps
Traditional version:

Break the cookies (set aside 1/4 broken) and place the others in a clean food bag. Crush them with a rolling pin, leaving them quite chunky, then transfer both to a large bowl.
Break the chocolate and melt it in a bain-marie.
Add the chopped hazelnuts, cocoa, and sugar to the cookies and mix with a spatula.
Also add the ricotta, rum (you can safely omit it or add a few drops of rum flavoring), and the melted chocolate, mix again.
Sprinkle a sheet of baking paper or aluminum foil with powdered sugar, pour the mixture onto it, and with the help of the paper, compact it well to shape it like a salami.
Wrap the salami in the paper, seal the ends, and place it in the refrigerator to rest for at least 3 hours (I left it overnight).
After the time has passed, gently remove the paper and slice your chocolate salami. Serve.

Without rinsing the bowl place the broken chocolate inside and blend it 10 sec/speed 6, collect the chopped chocolate from the edges with a spatula, and activate the Thermomix 4 Min./ 122°F / Speed. 2.
Add the chopped hazelnuts in the bowl with the cookies, cocoa, and sugar, mix with a spatula.
Also add the ricotta, rum (you can safely omit it or add a few drops of rum flavoring), and the melted chocolate, mix again.
