Christmas Panettone Cake.
Simple, soft, delicious.
The Christmas panettone cake is a very simple and quick dessert to prepare, super soft, fragrant, and delicious, a quick but equally delicious alternative, if not more so than the traditional panettone.
I used butter for a nice flavor and aroma, but you can also use seed oil.
Try it, it will surprise you, it’s a wonderful dessert that will win you over at the first taste 🙂

Ingredients
- 3 medium eggs (180 g)
- 170 g sugar
- 130 g melted butter (or 1/2 cup corn oil)
- 3/4 cup orange juice (to be squeezed fresh)
- 3 cups pastry flour (or all-purpose flour)
- 1 packet vanillin
- 16 g baking powder (1 packet)
- 1 pinch salt
- 100 g candied fruit
- 120 g raisins
- to taste sliced almonds
- to taste powdered sugar

- 1 Mold
- 1 Spatula

Steps
Butter and flour a 9.5/10 inch springform pan, I put parchment paper on the bottom.
Preheat the oven to 340°F static, or 320°F fan.
Melt the butter, I melted mine for almost 2 minutes in the microwave.
Squeeze the oranges and measure 3/4 cup of juice.
With an electric whisk or a stand mixer with the whisk attachment, beat the eggs with the sugar, vanillin, and pinch of salt at maximum speed, as soon as they become light and fluffy add the butter while continuing to beat and the orange juice.
Beat for another minute then add the sifted flour in 3 additions while continuing to beat but at reduced speed.
Once all the flour is added and a smooth and homogeneous batter is obtained, add the sifted baking powder, mix well with the electric whisk.
Once the baking powder is incorporated turn off the electric whisk and mix with a spatula.
Add the candied fruit and raisins and mix with the spatula to incorporate it into the batter.
Pour the batter into the previously buttered pan.
Sprinkle the surface with sliced almonds and bake in the hot oven at 340°F for about 50 minutes.
Check the cooking with a toothpick, it should come out dry, otherwise lower the temperature to 320°F and cook until done.
Once the panettone cake is cooked remove from the oven, let it cool and sprinkle with powdered sugar as desired.
Serve.

Add the sifted baking powder 2 minutesKnead.Once the baking powder is incorporated turn off the Bimby and mix with a spatula.
Add the candied fruit and raisins and mix with the spatula to incorporate it into the batter.
Pour the batter into the previously buttered pan.
Sprinkle the surface with sliced almonds and bake in the hot oven at 340°F for about 50 minutes.
