Cloud Brioche

Cloud Brioche.

Super soft, fragrant, delicious.

The cloud brioches are very soft brioches, very easy to prepare, as soft as clouds with a special aroma and flavor. Perfect to enjoy on their own or filled with Nutella, jam, ice cream, or whatever you prefer. Perfect for breakfast for young and old alike, they will win everyone over with their goodness.

Ingredients

  • 4 1/3 cups Manitoba flour
  • 0.8 cup milk (at room temperature)
  • 7 tbsp butter (at room temperature)
  • 4.4 oz whole plain yogurt (I used Greek yogurt, at room temperature)
  • 1 egg (at room temperature)
  • 1 tbsp honey
  • 1/3 cup sugar
  • 1 pinch salt
  • 0.35 oz fresh yeast
  • Grated peel of 1 untreated lemon
  • 1 tbsp vanilla extract
  • 1 egg
  • 2 tbsp milk

Steps

  • Dissolve the yeast well in the milk.

    Add the egg, honey, sugar, flour, flavors, and yogurt and start kneading, you can do it by hand or with the K hook of the stand mixer.

    Add a pinch of salt, fit the hook to the mixer and work in the mixer or by hand for about 3 minutes, start incorporating the butter little by little, once the butter is incorporated work for another 5 minutes, the dough should be well worked, smooth and homogeneous.

    Transfer the dough to a large bowl, cover with a cloth and let it rise for 2 hours.

  • Grease a 10-inch springform pan.

    After the rising time, shape the dough into 10 balls and place them in the pan, let them rise well covered with a cloth (about an hour, but it depends on the external temperature).

    Once the brioche has risen well, preheat the oven to 320°F static.

    Beat the egg with the milk and gently brush it over the brioche, let it rest for 10 minutes.

    Bake the brioche for 25 minutes, then check the cooking with a toothpick in the center of a ball.

    Remove from the oven and let it cool covered with a clean cloth.

  • Put the yeast with the milk in the Thermomix for 20 sec/speed 3.

    Add the egg, honey, sugar, flour, flavors, and yogurt and start kneading 2 minutes/Knead.

    Add a pinch of salt 1 minute/Knead, then set 3 minutes/Knead and start inserting the butter little by little through the hole in the lid, once the butter is incorporated work for another 5 minutes/Knead.

    Transfer the dough to a large bowl, cover with a cloth and let it rise for 2 hours.

  • Grease a 10-inch springform pan.

    After the rising time, shape the dough into 10 balls and place them in the pan, let them rise well covered with a cloth (about an hour, but it depends on the external temperature).

    Once the brioche has risen well, preheat the oven to 320°F static.
