The Cloud Brioche is one of the softest, most fragrant and delicious brioches ever tasted, very easy to prepare, just wait for the rising time and you will have a genuine and tasty breakfast that will win everyone over with its soft goodness.

Ingredients
- 4 1/2 cups Manitoba flour
- 2/3 cup milk (at room temperature)
- 1/2 cup fresh liquid cream
- 7 tbsp butter (at room temperature)
- 1/3 cup sugar
- 1 egg (at room temperature)
- 5 oz sourdough starter (or 1/4 oz fresh yeast)
- Grated zest of 1 untreated lemon
- 1 teaspoon honey
- 1 teaspoon vanilla extract
- 1 pinch salt
- as needed milk
- as needed sugar sprinkles

- 1 Mold
- 1 Bowl
Steps
Dissolve the sourdough starter (or the yeast in the milk) by working it for about 5 minutes.
Add the egg, honey, sugar, flour, aromas, and cream and start kneading, you can do it by hand or with the K hook of the stand mixer.
Add a pinch of salt, mount the hook on the stand mixer, and work in the stand mixer or by hand for about 3 minutes, start incorporating the butter one piece at a time, as soon as the butter is incorporated, work for another 5 minutes, the dough should be well worked, smooth and homogeneous.
Transfer the dough to a large bowl, cover with a towel, and let it rise for 5 hours.
After the rising time, shape 8 balls from the dough and place them in a greased 10-inch ring mold, let it rise well covered with a towel.
Once the cloud brioche bread is well risen, brush it gently with milk and sprinkle with sugar sprinkles, let it rest for 10 minutes.
Preheat the oven to 320°F and after 10 minutes of heating, bake the cloud brioche bread for 25 minutes, checking the baking with a toothpick in the center of a ball.
Remove from the oven and let it cool covered with a clean towel.
Place the sourdough starter (or the yeast) with the milk in the bowl 2 minutesKnead, if using yeast, 20 sec/speed 3 will be sufficient.
Add the egg, honey, sugar, flour, aromas, and cream and start kneading 2 minutesKnead.
Add a pinch of salt 1 minuteknead, then set 3 minutesknead and start inserting the butter a piece at a time through the hole in the lid, as soon as the butter is incorporated, work for another 5 minutesknead.
Transfer the dough to a large bowl, cover with a towel, and let it rise for 5 hours.
After the rising time, shape 8 balls from the dough and place them in a greased 10-inch ring mold, let it rise well covered with a towel.
