Cloud Cake with Jam
Simple, fragrant, very soft.
The Cloud Cake with Jam is a pantry cake with a unique aroma and softness, easy and quick to prepare, with its soft, slightly sweet base and creamy jam heart it will win everyone over at the first taste.
A cake as soft as a cloud and as delicious as few others, where the jam magically settles in the center during baking creating a creamy filling that’s too scrumptious.

Ingredients
- 4 large eggs (at room temperature)
- 1 cup potato starch
- 1 1/3 cups all-purpose flour
- 2/3 cup sugar (3/4 cup for a sweeter version)
- 2/3 cup corn oil
- juice of 1 lemon
- Grated peel of 1 untreated lemon
- 1 tablespoon vanilla essence
- 1 pinch salt
- 1 packet baking powder
- 1 1/4 cups peach jam (or flavor of your choice)
- 1 tablespoon sugar crystals

- 1 Cake mold
- 1 Spatula
- 1 Bowl

Steps
Butter a 9.5-inch Bundt pan.
Preheat the oven to 340°F.
Sift the flour with the baking powder and the potato starch, set aside.
With an electric whisk or a stand mixer, beat the eggs with the sugar, vanilla aroma, and a pinch of salt for about 5 minutes until the mixture is fluffy, firm, and frothy.
While continuing to beat, add the oil, lemon juice, and zest to the eggs and continue beating.
Turn off the electric whisk and gently incorporate the flour mixture into the eggs with a spatula, folding from top to bottom.
Pour the mixture into the mold, spoon the jam over the surface, avoiding getting too close to the edges.
Sprinkle the surface with sugar crystals.
Bake in a preheated oven at 340°F for about 35 minutes, depending on your oven, and check the center with a toothpick.
Once baked, remove the cake from the oven, let it cool, and then place it on a serving plate.

Preheat the oven to 340°F.
Place the eggs, sugar, vanilla flavor and a pinch of salt in the bowl. 1 min / speed 3.
Add the oil, lemon juice, and grated lemon peel to the eggs. 30 sec / speed 3.
Add the flour, starch, and baking powder. 40 sec / speed 3.
Turn off the Bimby and use a spatula.
Pour the mixture into the mold, spoon the jam over the surface, avoiding getting too close to the edges.
Sprinkle the surface with sugar crystals.
Bake in a preheated oven at 340°F for about 35 minutes, depending on your oven, and check the center with a toothpick.
Once baked, remove the cake from the oven, let it cool, and then place it on a serving plate.
