Simple, very soft, delicious.

The clouds with chocolate chips are very soft brioches perfect for breakfast, they are very delicious and easy to prepare. Try them, they will win you over at the first taste.

Ingredients

  • 2 3/4 cups Manitoba flour
  • 1/3 cup milk
  • 1 egg (at room temperature)
  • 1/4 cup sugar
  • 1/3 cup fresh liquid cream
  • 5 tbsp butter (at room temperature)
  • 1 tsp honey
  • 1 tsp fresh yeast (or 90 g sourdough)
  • 1 pinch salt
  • Grated peel of 1 untreated lemon
  • Half tsp vanilla extract
  • 5 oz chocolate chips
  • 1 egg
  • 4 tbsp milk
  • as needed granulated sugar

  • 1 Stand mixer
  • 1 Bowl
  • 1 Pan
  • 1 Pastry board

Steps

  • Put the chocolate chips in the freezer while we prepare the dough.

    Dissolve the yeast in the milk thoroughly (you can also use sourdough, you will need 90 g).

    Add the egg, honey, sugar, flour, flavors, and cream and start kneading, you can do it by hand or with the K hook of the stand mixer.

    Add a pinch of salt, attach the hook to the stand mixer, and work in the stand mixer or by hand for about 3 minutes, start incorporating the butter a little at a time, and once the butter is incorporated work for another 5 minutes, the dough should be well kneaded, smooth, and homogeneous.

    Transfer the dough to a large bowl, cover with a cloth, and let rise for 3 hours.

  • After the rising time, put the dough back in the stand mixer or knead by hand and add the chocolate chips.

    Butter a rectangular pan.

    Divide the dough into 12 pieces and form 12 balls, roll them on themselves and place them in the previously buttered pan, let them rise well covered by a cloth.

    Once the clouds with chocolate chips are well risen, beat the egg with the milk.

    Brush the brioches gently with the egg mixture and sprinkle with granulated sugar, let rest for 10 minutes.

    Turn on the oven to 320°F and after the 10 minutes it heats up, bake for about 25 minutes, they should brown, check the baking with a toothpick in the center of a ball.

    Remove from the oven and let cool covered with a clean cloth.

    Put the yeast in the bowl with the milk 20 sec speed (if you use sourdough it should be worked 5 minutesKnead.

    Add the egg, honey, sugar, flour, flavors, and cream and start kneading 2 minutesKnead.

    Add a pinch of salt 1 minuteknead, then set 3 minutesknead and start inserting the butter a little at a time through the hole in the lid, once the butter is incorporated work for another 5 minutesknead.

    Transfer the dough to a large bowl, cover with a cloth, and let rise for 3 hours.

    After the rising time, by hand, add the chocolate chips and knead until they are blended into the dough.

    Butter a rectangular pan.
