Cod with onions is a rustic and tasty fish dish, very simple to prepare, but very flavorful. The combination of onions and cod is perfect and if you want you can also add some black olives, I preferred to leave the dish simple with the cod soft and crunchy, the onions simply caramelized, but you can add them for an extra touch during the cooking of the onions.

Ingredients

  • 4 large pieces of already desalted cod (prefer the thick ones)
  • 21 oz onions
  • 1 tbsp white wine
  • to taste semolina
  • to taste salt
  • to taste extra virgin olive oil
  • to taste pepper
  • to taste peanut oil
  • 1 tsp sugar

Steps

  • Before proceeding with this recipe, you need to desalinate the cod as indicated in the tutorial you can find by CLICKING HERE, or buy it already desalted.

    Remember, the skin should never be removed, it helps keep the pieces of cod compact and prevents them from falling apart during cooking.

    After soaking the cod as described, remove the water, leave it in the fridge for 30 minutes to drain and then dry it with a clean cloth.

    In the meantime, let’s prepare the onions.

  • Peel the onions and slice them not too thinly.

    Heat a pan on the stove with some extra virgin olive oil, add

    the onions, lightly salt, add the sugar, stir, cover with a lid and cook for about 10 minutes on medium/high heat, stirring occasionally.


    After 10 minutes, add the white wine and let it evaporate, adjust the salt if necessary but do not overdo it, the cod is already flavorful, add a grind of pepper and continue cooking for a few more minutes on low heat without the lid until the onions are still firm but cooked.

  • While the onions cook, put plenty of peanut or olive oil in a large pan, about 1 inch, bring it to temperature (356°F).

    While the oil reaches temperature, coat the pieces of cod well on all sides in the semolina flour, shake off the excess semolina and fry the cod in the hot oil (to see if the oil is at temperature, drop a very small breadcrumb in, if it immediately rises to the surface and forms many bubbles, the oil is ready) fry the cod well on medium heat, turning them only when that side is golden.


    Remove the cod from the oil when it is well golden and crispy on all sides using 2 forks and add the fried pieces of cod to the onions, add a grind of pepper on the cod, mix everything and serve.

  • The cod with onions is ready to be enjoyed. Enjoy your meal!
