Ingredients
- 8 slices chicken breast
- 4 slices cooked ham
- 5.3 oz scamorza (or Galbanino)
- 3 medium eggs
- 1 tbsp grated Parmesan
- as needed breadcrumbs
- as needed all-purpose flour
- as needed salt
- as needed pepper
- as needed corn oil (or extra virgin olive oil if baking)
Tools
- 1 Cutting Board
- 1 Meat Tenderizer
- 1 Pan
Steps
Beat the eggs with a pinch of salt, a grind of pepper, and the grated Parmesan.
Pour the breadcrumbs onto a plate and set aside.
Cut the scamorza (or Galbanino) into 8 strips.Cut the ham slices in half.
On a cutting board, use a meat tenderizer to thin the chicken slices.
Now we can prepare our rolls:
Stuff the chicken slices by laying them one by one on a work surface, cover with ham, and place the cheese strip on one side. Roll the chicken slice onto itself starting from the side with the cheese filling, thus forming rolls, and place them on a tray as you go.
Repeat the same process for all the chicken slices, stuff them the same way and form the rolls.Coat the rolls one by one first in flour, then in the previously beaten egg, then in the breadcrumbs, breading well even the edges to prevent the filling from leaking during cooking.
If you wish, pass them quickly again in the egg and breadcrumbs (thus making a double breading that will make our cordon rolls crispier on the outside).Fried:
Heat oil in a large pan, as soon as the oil is hot cook the cordon bleus two at a time, on low heat, let them brown well on one side, then carefully turn them to the other side, then once cooked place them to dry on paper towels.
Serve hot.Baked:
Preheat the oven to 356°F (static) (you can also cook them in an electric fryer at 338°F).
Grease a baking dish with oil.
Lay the rolls in the dish, trying to place the closure side down.
Spray with oil.
Bake in the hot oven at 356°F for about 20 minutes (they should brown). In the air fryer cook 8/10 minutes at 338°F, then flip them to the other side, spray with oil, and cook for about another 8 minutes, they should brown.
Serve immediately.
The cordon rolls are ready to be enjoyed, bon appétit!
