Country Soup.
Simple, rich, delicious.
Country soup is a very simple dish to prepare, full of flavor and delicious, a perfect comfort food for cold autumn or winter days, a creamy and very tasty one-pot dish that will give you plenty of healthy energy and warm your heart.
Country soup is a rustic, very nutritious, and healthy dish made with legumes, cereals, and vegetables. Try it, it’s perfect for the whole family and will win everyone over at the first taste 🙂

Ingredients
- 9 oz lentils
- 3.5 oz dried beans (Or 5.3 oz fresh)
- 1 large potato
- 2 carrots
- 2.5 oz pearled spelt
- 2.5 oz pearled barley
- 1 onion
- 1 stalk celery
- 6 cherry tomatoes (or 2 peeled tomatoes)
- to taste extra virgin olive oil
- to taste salt
- to taste pepper
- parsley (For serving)
- 4 slices toasted bread (rubbed with garlic)

Steps
The night before, rinse the dried beans and soak them in water (if using fresh ones, skip this step).
The next day:
Fill a large pot halfway with salted cold water and bring to a boil.
Add the beans and cook for about 40 minutes after boiling, on very low heat, without stirring.
Meanwhile, while the beans are cooking, peel, rinse, and dice the potato.Dice the celery and carrots into small cubes too.
Peel and chop the onion.
Put a drizzle of oil in a small pan and sweat the celery, carrot, and onion over low heat.
Dice the cherry tomatoes and add them to the pan, quickly cook them with the vegetables, and then set everything aside.After 40 minutes, add the lentils, potatoes, and cereals (rinsed quickly under running water) to the beans.
Bring to a boil and cook covered on low heat for 20 minutes (check if you need to add a bit of boiling water to cook everything and keep it creamy).
Salt.
After 20 minutes, add the vegetables with the cherry tomatoes, stir, continue cooking for another 10 minutes, then check if the cereals and potatoes are cooked, otherwise cook for a few more minutes.Once cooked, add a grind of pepper, adjust the salt, and turn off the heat.
Serve the Country Soup with a drizzle of extra virgin olive oil, raw, freshly ground black pepper, and a sprig of parsley.
Accompany each plate with a garlic-scented bruschetta.
