Cream Cannoli are a super delicious dessert you can’t miss, with a crunchy shell and a fragrant, creamy filling of luscious vanilla and chocolate cream, a dessert simple to prepare, just follow the described order and in no time you’ll have a delicious bakery-worthy dessert 🙂

Ingredients

  • 2 eggs (at room temperature)
  • 4 cups all-purpose flour
  • 3.5 oz milk (at room temperature)
  • 3.5 oz liquor (to taste, you can mix several types: rum, limoncello, Borsci, maraschino, marsala, cointreau, etc…)
  • 3.5 oz olive oil
  • 3.5 oz sugar
  • 2 egg yolks
  • 1 whole egg
  • 4.5 oz sugar
  • 3 oz cornstarch
  • 17 oz milk
  • 1 pinch salt
  • grated zest of 1 lemon
  • Half vanilla bean
  • 2 egg yolks
  • 1 whole egg
  • 4.5 oz sugar
  • 3 oz cornstarch (or flour)
  • 17 oz whole fresh milk
  • 3.5 oz dark chocolate, 55%
  • Half bean vanilla
  • 1 pinch salt
  • 17 oz sweetened whipping cream
  • as needed peanut oil
  • as needed powdered sugar

Steps

  • First, prepare the shells.


    On a work surface if kneading by hand or in the bowl of a stand mixer, put the flour, a pinch of salt and sugar, mix briefly with a spoon.

    Then add the liquor (you can mix several types), the milk, the slightly beaten eggs, the oil and knead well for a few minutes, it should result in a smooth, homogeneous, and well-worked dough that does not stick to the hands (if needed, add more milk or flour).

    Once the dough is ready, let it rest covered with a cloth while we prepare the creams.

  • Dough with Bimby:


    Put the flour, sugar, and a pinch of salt in the bowl 10 secspeed 1.

    Add the liquor (you can mix several types), the milk, the slightly beaten eggs, the oil 4 minutesKneading Function.

    Transfer the dough onto the work surface and knead well for a few minutes, it should result in a smooth, homogeneous, and well-worked dough that does not stick to the hands (if needed, add more milk or flour).


    Once the dough is ready, let it rest covered with a cloth while we prepare the creams.

  • Let’s prepare the filling:


    Prepare the custard as described HERE.


    Prepare the chocolate cream as described HERE.

    Let both cool down, then you will add the whipped cream.

  • Take the dough again and knead it lightly, divide it into 3 parts and roll it out on a very lightly floured work surface into a sheet about 1/8 inch thick, cut long strips about 3/4 inch wide (or use a pastry cutter or a cup to cut out many circles) and cover the cannoli molds, close the seam with a little lightly beaten egg white.


    Proceed in the same way for the remaining dough (if you have few cannoli molds, you can fry the first ones and then prepare more).

  • Heat plenty of peanut oil in a high-sided pan or large pot (340°F).


    Fry the cannoli a few at a time, letting them brown on all sides.


    Let them dry on kitchen paper for a moment, gently remove the mold, and roll the cannoli in powdered sugar, being careful not to crush them, lay them on a tray to cool.

    Once all the cannoli have been fried we can complete the filling.

  • With an electric mixer or in the stand mixer, whip the cream until stiff.

    Take the creams and mix them with a spatula to make them nice and creamy.


    Gently with a spatula fold half of the whipped cream into the simple custard, which is now cold, and incorporate well.

    Do the same with the chocolate cream, fold in the remaining whipped cream and mix until well combined.

  • Fill the cannoli with the creams, you can fill them half with chocolate and half with plain cream, or with only one flavor.

    Finally, lightly dust with powdered sugar.


    Place in the fridge for at least 1 hour.

  • The cannoli are ready to be enjoyed. Enjoy your dessert!
