Creamy pasta with potatoes and stracchino is a very creamy, delicious, flavorsome, and tasty first course, it is prepared in just a few minutes and conquers everyone at the first taste, a perfect dish for the whole family, for guests or among friends.

For this creamy pasta with potatoes and stracchino, you need flavorful potatoes. I, as always (I adore them), used the delicious Le Gustose potatoes from Marchese Ortofrutta, firm and tasty yellow potatoes, delicious in any way they are cooked, the best potatoes I’ve ever tasted and if you try them, you’ll agree with me 😉

The Le Gustose potatoes are incredibly tasty because the Marchese company uses only high-quality raw materials from their territory, Irpinia. Ingredients

  • 13 oz short pasta (like sedanini, fusilli, pennette, caserecce, farfalle, etc…)
  • 2 yellow potatoes
  • 1 onion
  • 0.85 cup tomato puree
  • 5 cherry tomatoes (2 peeled tomatoes are also fine)
  • 3.5 oz stracchino cheese
  • 1 oz grated Parmesan cheese
  • 1 bunch parsley
  • to taste extra virgin olive oil
  • to taste salt
  • to taste pepper

  • 1 Pan
  • 1 Potato Peeler

Steps

  • Place a pot with plenty of water on the stove to cook the pasta.

    Wash the potatoes well, peel them and cut them into cubes, rinse them again and add them to the pasta cooking water, salt it, bring to a boil and from the boil cook for 15 minutes.

    Meanwhile, peel and finely chop the onion.

    Rinse a bit of parsley and chop it, set it aside.

    Rinse the cherry tomatoes and cut them in half or into four parts.

    In a large pan, add a generous drizzle of oil, add the onion and over low heat let it turn slightly golden, stirring, also add the puree and cook everything over high heat for a few minutes.

    Also add the cherry tomatoes, let them wither over high heat for a few minutes and as soon as they are withered, add the stracchino, adjust the salt, add a grind of pepper and turn off the heat.

  • After 1520 minutes from the potatoes boiling, add the pasta to the water along with the potatoes, continue cooking everything one minute less than the time indicated on the pasta package.

    Once cooked, use a slotted spoon to scoop the pasta and potatoes directly into the pan with the sauce, return the pan to the heat and let flavor by stirring for a minute, adding a bit of pasta cooking water if needed to make everything creamy, also add the chopped parsley and grated cheese.

    Serve immediately.
