The Crêpes, the recipe for making them perfect is one of those preparations that cannot be missing in any recipe book, perfect to fill sweet or savory, they are uniquely delicious, this is then the recipe learned at culinary school, you will have very elastic, soft and tasty crêpes, you can fill them as you like and they will never break.

Ingredients
- 3 large eggs (at room temperature)
- 2 cups all-purpose flour
- 2 1/8 cups milk
- 1 tbsp extra virgin olive oil
- 1 pinch salt
- as needed butter (to grease the pan)

Steps
Beat the eggs with a pinch of salt and the tablespoon of oil with a hand whisk.
Gradually add the flour and mix with the whisk.
Mix with a whisk until smooth. Then gradually add the milk, stirring constantly.
Gradually add all the milk and stir until you obtain a smooth and homogeneous batter.
Cover with plastic wrap and let the batter rest for 30 minutes in the refrigerator.
Remove the mixture from the fridge and mix it again with a whisk.
Heat a 7.9-inch pan over medium-low heat.
Once the pan is hot, grease it with a tiny bit of butter and wipe off the excess with a paper towel (this step should be repeated for each crêpe).Pour a small ladle of batter, tilt the pan to spread the batter evenly over the surface, and once the edges turn golden, flip the crêpe with a spatula.
Let the other side brown as well.
Remove the crêpe and place it on a tray.
Proceed in the same way with another crêpe.
Continue until the batter is used up.
