Eggs Amatriciana Style.

Eggs Amatriciana Style are a very simple and quick second course to prepare, economical and very tasty; prepare a lot of bread, it’s impossible not to mop up the delicious sauce!

As I was saying, Eggs Amatriciana Style are very flavorful, perfect for dinner as a single dish or as a substantial and tasty second course; now you just have to try them… You’ll lick your chops 😉

P.s. For this recipe, I calculated 2 eggs per adult and 1 for children, if you are 4 adults, or want a bigger portion, prepare 8 eggs.

Ingredients

  • 6 eggs
  • 9 oz cherry tomatoes (or peeled tomatoes)
  • 1.7 cups tomato passata
  • 1 onion (small)
  • 1 clove garlic
  • 5 oz guanciale (or pancetta)
  • to taste extra virgin olive oil
  • to taste salt
  • to taste pepper
  • chili pepper (to taste)
  • 1 tbsp grated pecorino cheese

Tools

  • 1 Pan
  • 1 Wooden Spoon

Steps

  • Peel the onion and chop it finely, also peel the garlic and crush it.

    Rinse the cherry tomatoes and cut them in half.

    Cut the guanciale into strips.

    Place the guanciale in a large pan on low heat, stirring constantly with a wooden spoon.

    As soon as the guanciale becomes transparent and a good amount of its fat has melted, add a drizzle of oil, onion, garlic, and chili pepper to taste, let it flavor for a moment, and as soon as the onion also becomes transparent, add the cherry tomatoes and the tomato passata, season with salt (not too much as pecorino will be added), add a grind of pepper and let it cook quickly covered with a lid over high heat, it should cook just a few minutes, shaking the pan often to mix it (in the end, the tomato should be cooked but remain juicy).

    Once the sauce is cooked, remove the garlic and crack the eggs directly onto the tomato, lightly salt the eggs as well, if you want another light grind of pepper, cover with a lid and cook for another 5 minutes.

    After the cooking time, if the egg whites are cooked and the yolks are creamy (if you want the eggs completely cooked, let them cook a few more minutes). Eggs Amatriciana Style are ready, sprinkle with pecorino and serve.
