Fake honey is the vegan alternative for those who want to prepare desserts where honey is used but don’t have it at home, or don’t use it because they are vegan.

Fake honey will win you over, it’s an alternative to honey that, apart from the beneficial properties and nutritional values, has nothing to envy of real honey. It’s creamy like honey, very fragrant, and the taste is delicious. Moreover, it is much more economical and you can make it whenever you need it.

Perfect for your Christmas desserts like struffoli, cartellate, etc… but it is also perfect for sweetening tea and drinks.

The recipe is both traditional on the stove or for those who have the Bimby.

Ingredients

  • 2 1/2 cups sugar
  • 1 cup orange juice
  • 3 1/2 tbsps lemon juice
  • 3 1/2 tbsps mandarin juice

Steps

  • Squeeze the citrus fruits and filter the juice.

    Put the citrus juice in a saucepan, add the sugar and stir.

    Cover with a lid and bring to a boil.

    Once it boils, lower the heat, place a wooden spoon underneath to let the steam escape, cook for about 20 minutes, stirring occasionally at first, then often.

    The fake honey is ready when it reaches the consistency of honey.

    Once ready, pour it into 2 previously sterilized jars and let it cool at room temperature. I recommend pouring it slowly into the jar because it is very hot and the jar might break.

    Once it’s cold, if not used immediately, store it in a dark pantry and it will keep for up to 6 months.

  • Squeeze the citrus fruits and filter the juice.

    Put the sugar and citrus juice in the Bimby bowl.

    Set for 25 minutesSpeed 3Varoma Temperature.

    Once ready, pour it into 2 previously sterilized jars and let it cool at room temperature. I recommend pouring it slowly into the jar because it is very hot and the jar might break.


    Once it’s cold, if not used immediately, store it in a dark pantry and it will keep for up to 6 months.

  • This should be done before starting the preparation.

    Wash 2 jars with their lids, rinse them well and place them in a large pot, cover them with cold water and bring to a boil.


    Once boiling, let them boil for 45 minutes.


    After 45 minutes, turn off the heat and let them cool in the boiling water.


    Once the water is cold, take them out with tongs (do not touch them with your hands) and let them drain upside down on a clean towel.
