Golden Fried Neapolitan Anchovies.

Simple, economical, flavorful.

Golden fried anchovies are a tasty treat, easy to prepare and full of flavor, perfect as a main course accompanied by a salad, as an appetizer, or as finger food to serve at a party… They are typical of the cuisine of my homeland, Naples… They require very few ingredients, take very little time to prepare and are perfect for the whole family, enjoyed by adults and children alike, winning everyone over at the first bite.

Ingredients

  • 1.1 lb Fresh anchovies (about 500 g)
  • 3 Eggs
  • 3 tbsp Grated Parmigiano Reggiano (about 20 g)
  • as needed Flour
  • as needed Salt
  • as needed Pepper
  • as needed Peanut oil

Tools

  • 1 Frying pan

Preparation

  • Rinse the anchovies and clean them gently by removing the head, guts and the central bone, leaving the two fillets attached like an open book and keeping the tail (you can ask your fishmonger to do this or do it at home yourself, it is very simple). Rinse them again gently and let them dry slightly on kitchen paper.

    Beat the eggs together with the grated Parmigiano, a pinch of salt and a grind of pepper.

    Dredge the boned anchovies in flour one at a time, then dip them in the beaten egg, making sure the egg adheres well to both sides.

    Heat oil in a large pan; when the oil is hot, fry the egg-coated anchovies a few at a time, browning them well on both sides. As they finish cooking, place them to drain on paper for fried foods and fry the remaining anchovies in the same way.

    The golden fried anchovies are ready: season them very lightly with a pinch of salt, add a grind of pepper and serve.

    If you serve them as a main course or single dish, accompany them with a generous mixed salad dressed simply with salt, oil and lemon.
