Ingredients

  • 4 eggs (at room temperature)
  • 1 cup sugar (about 2/3 cup for a less sweet version)
  • 9 tbsp butter (or 1/2 cup corn oil)
  • 7 oz dark chocolate
  • 1/2 cup unsweetened cocoa powder
  • 1 3/4 cups all-purpose flour
  • 1/4 cup milk (at room temperature)
  • 1 tsp vanilla extract
  • 1 packet baking powder (16 g)
  • 1 pinch salt

Tools

  • 1 Electric Whisk electric whisks
  • 1 Cake Pan 24 cm springform pan
  • 1 Spatula spatula

Steps

  • First, chop the chocolate and melt it in a double boiler with the butter. Once melted, let it cool slightly.

Butter a 24 cm springform pan.

Preheat the oven to 356°F (static).

Sift the flour, cocoa, and baking powder together.

Using electric whisks, beat the eggs with the sugar and a pinch of salt. Once the mixture is nice and frothy, gradually add the milk while still beating, then add the chocolate and butter mixture and the vanilla.

Once the mixture is smooth, gradually add the sifted flour mixture while still beating. Once all the flour is incorporated, beat for a couple more minutes.

Transfer the batter to the buttered pan, level the surface with a spatula, and bake on the lower shelf of the oven (just above the base) at 356°F for about 40 minutes. The toothpick test should come out dry.

  • Let it cool, then place it on a serving tray.
