Grandma’s soft donut with jam.

Simple, very soft and delicious.

Grandma’s soft donut with jam is a cake as soft as a cloud with a delicious aroma of vanilla and lemon and is very tasty with its heart of apricot jam, a dessert that literally melts in your mouth. Perfect for snack and breakfast, it will be a joy for young and old.

Ingredients

  • 4 large eggs (at room temperature)
  • 3/4 cup sugar (1/2 cup for a less sweet version)
  • 2 and 3/4 cups all-purpose flour
  • 1 container plain natural yogurt (at room temperature)
  • 2/3 cup corn oil
  • zest of 1 untreated lemon
  • juice of half a lemon
  • 1 pinch salt
  • 1 tablespoon vanilla essence
  • 1 packet baking powder (16 g)
  • 1 cup apricot jam (or flavor of choice)

  • 1 Electric whisk
  • 1 Mold
  • 1 Bowl
  • 1 Spatula
  • 1 Oven

Steps

  • Preheat the oven to 340°F and butter a 9.5/10-inch donut mold.

    Using an electric whisk, beat the eggs with the sugar and a pinch of salt.

    While whisking, add the oil, lemon juice, vanilla essence, then the yogurt and grated lemon zest.

    Sift the flour with the baking powder and gently fold it into the egg mixture using a spatula.

    Once the batter is smooth, it’s ready.

    Pour the mixture into the mold, spoon the jam over the surface, avoiding getting too close to the mold edges.

    Bake at 340°F for about 40 minutes, check with a skewer (If done, it should be dry, otherwise continue baking for a few more minutes).

    Allow the donut to cool, place it on a tray and dust with powdered sugar if desired.

  • Butter a 9.5/10-inch donut mold.

    Preheat the oven to 340°F.

    Insert the butterfly whisk into the bowl.

    Separate the egg yolks from the whites.

    Place the egg whites with a pinch of salt in the bowl for 3 minutes/speed 4.

    Transfer them to a bowl.

    Put the yolks in the bowl with sugar, grated lemon zest and mix 2 minutes/speed 4.

    Remove the butterfly whisk and add the flour, oil, lemon juice, and yogurt. 50 Sec./Speed 3.

    Add the baking powder 20 Sec./Speed 3.

    Turn off the Bimby and gradually add the egg whites, folding with a spatula from bottom to top.

    Once the batter is smooth, it’s ready.

    Pour the mixture into the mold, spoon the jam over the surface, avoiding getting too close to the mold edges.

    Bake at 340°F for about 40 minutes, check with a skewer (If done, it should be dry, otherwise continue baking for a few more minutes).

    Let it cool, place on a tray and dust with powdered sugar if desired.
