Grandma’s Struffoli are an ancient Neapolitan recipe for making soft and crumbly struffoli, with a non-dripping honey glaze, fragrant and delicious. Every family here has its own recipe, today I present the one from my grandmother, a recipe over 100 years old, and it’s perfect, you’ll have delicious struffoli.

Chocolate Struffoli

Ingredients
- 4 eggs
- 2 tablespoons butter (originally one and a half tablespoons of lard)
- 3 1/3 cups all-purpose flour
- 1 tablespoon sugar
- grated zest of one orange (untreated)
- 1 pinch salt
- 1 tablespoon flavored liqueur (such as anise, rum, strega, etc…)
- 1 cup honey
- 1/2 cup sugar
- juice of half an orange
- peels of 2 mandarins
- as needed colored sprinkles
- as needed candied cherries

- 1 Bowl
Steps
Put the eggs, liqueur, sugar, melted butter, and pinch of salt in a bowl and mix.
Add the flour gradually until a homogeneous, smooth, and non-sticky dough forms. If needed, add a little more flour.
Cut small pieces from the dough, mold them into very thin sausages with your hands, and cut them into small pieces. Place them spaced apart on a lightly floured cloth.Once all the struffoli are ready, we can proceed to cooking.
Heat plenty of seed oil in a high-sided saucepan, and once the oil reaches the temperature (340°F), fry the struffoli a few at a time and brown them on all sides, stirring often with a slotted spoon.As soon as they are golden, remove them from the oil and let them drain on frying paper.
Once all the struffoli are cooked and cold, pour them into a bowl without the paper and prepare the honey glaze.
Cut the mandarin peels into strips.
On the stove, melt the honey with the sugar, the juice of half an orange, and the mandarin peels. Once it starts to boil, cook for a few minutes while stirring and turn off the heat, then pour it over the struffoli.Gently mix to glaze all the struffoli evenly.
While still hot, place them on a tray and decorate with sprinkles and cherries.

Put the eggs with the sugar, liqueur in the bowl 20 sec. / speed 3.
Add the pinch of salt, grated orange zest, and flour, work 4 min. / Knead speed.
Check the consistency of the dough with your finger; if it doesn’t stick to your hands, it’s fine. If it sticks, add a little flour and work another 2 min. / Knead.Proceed with frying and glazing the struffoli as described above.
