Grandma’s Walnut Sweet Bread.

Grandma’s Walnut Sweet Bread is a not-too-sweet dessert perfect for autumn or winter, a rustic, fragrant, and delicious dessert that is very easy to prepare, an old and genuine recipe perfect for any occasion that will win you over at the first bite 🙂

Ingredients

  • 3 large eggs
  • 2 1/2 cups all-purpose flour
  • 2/3 cup sugar (I used brown sugar)
  • 1/2 cup corn oil
  • 3/4 cup walnut halves
  • 1 packet baking powder
  • Grated Zest of 1 Organic Lemon
  • 1 pinch salt
  • as needed powdered sugar

Tools

  • 1 Stand Mixer
  • 1 Spatula
  • 1 Baking Pan
  • 1 Oven

Steps

  • Grease a 12 x 8 in rectangular baking pan well.


    Preheat the oven to 340°F.

    Coarsely chop the walnuts with a knife.


    In a stand mixer or with electric beaters, beat the eggs with the sugar, lemon zest, and a pinch of salt.


    Sift the flour with the baking powder.


    Add the oil to the eggs while continuing to beat.


    Turn off the mixer and gradually add the flour mixture, stirring with a spatula from bottom to top, also add the walnuts.


    Pour the obtained batter into the greased pan.


    Bake at 340°F for about 30 minutes, check the baking with a toothpick, if the sweet bread is not yet cooked, continue baking for a few more minutes.


    Remove the baked dessert from the oven and let it cool, once cold, place it on a tray and sprinkle with powdered sugar.

    In the bowl, mount the butterfly whisk, add the eggs, the grated lemon zest, the sugar, and a pinch of salt 1 min / speed 3.


    Add the oil 30 secondsspeed 3.


    Remove the butterfly whisk and add the flour and the baking powder 50 secondsspeed 6.

    Turn off the Bimby and with a spatula incorporate the walnuts, stirring until they are homogeneously blended into the batter.

  • Pour the obtained batter into the greased pan.

    Bake at 340°F for about 30 minutes, check the baking with a toothpick, if the sweet bread is not yet cooked, continue baking for a few more minutes.

    Remove the baked dessert from the oven and let it cool, once cold, place it on a tray and sprinkle with powdered sugar.
