Heart shortbread for Valentine’s Day,
Simple, beautiful to look at, absolutely delicious.
As February 14th, the day of lovers, approaches, heart shortbread for Valentine’s Day makes the perfect gift for everyone we love. Easy to prepare, beautiful to look at, and delicious to taste, they will win everyone over 🙂
To prepare these delicious cookies, I used a special shortcrust pastry that melts in your mouth and a delicious chocolate glaze. You can prepare them in advance, and if you use glucose in the glaze, they keep well for many days when stored in a food bag and then placed in a cookie tin.
So, everyone to the kitchen… ah, they are also perfect for those new to cooking; today we are making delicious heart shortbread for Valentine’s Day 🙂

Ingredients
- 2 1/4 cups all-purpose flour
- 1/4 cup potato starch
- 2 egg yolks
- 9 tbsp butter
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1 pinch salt
- 2 tbsp cocoa powder
- 3.5 oz 55% dark chocolate
- 3.5 oz 40% milk chocolate
- 1 tsp glucose (or butter)

- 1 Work surface
- 1 Rolling pin
- 1 Cookie cutter
- 1 Blender
- 1 Baking tray
- 1 Oven
Steps
Sift the flour, potato starch, powdered sugar, and baking powder on the work surface and mix them with your hands. Add the butter in small pieces and start kneading until you get a crumbly dough.
Add the vanilla, a pinch of salt, and the egg yolks, and quickly knead everything together until you get a smooth and homogeneous dough.
At this point, divide the dough in half.
Wrap one half in food film; to the other half, add the sifted cocoa and knead until you get a homogeneous cocoa dough. Wrap this dough in film as well and store both in the fridge for at least 30 minutes.
P.S. You can also prepare the shortcrust in the planetary mixer with the K hook.
Put the flour, potato starch, powdered sugar, and baking powder in the bowl 10 secspeed 2, add the butter in pieces 20 secspeed 4.
Add the vanilla, a pinch of salt, and the egg yolks 30 secspeed 3.
At this point, transfer the dough onto a work surface and compact it quickly, then divide it in half.
Wrap one half in food film; put the other half back in the bowl, add the cocoa 1 minuteknead then transfer the dough to the work surface and work it quickly until you obtain a homogeneous cocoa dough, wrap this dough in film as well and store both in the fridge for at least 30 minutes.
Preheat the oven to 356°F.
On a lightly floured surface, roll out the light dough with a rolling pin to about 1/8 inch thick.
Use a heart-shaped cutter to cut out many cookies.
Place the cookies on a baking sheet lined with parchment paper, leaving about 1/4 inch between each one.
Re-knead the scraps and form more cookies.
Do the same with the cocoa dough; you should obtain many light and dark cookies. If they don’t fit on one baking sheet, place them on two.
Bake in a preheated oven at 356°F for about 12 minutes, adjusting based on your oven; they should be lightly golden.
Remove from the oven and let the cookies cool completely without removing them from the baking sheet.
Break the chocolate into pieces and chop it in the blender (or Bimby).
Melt the chocolate in a bain-marie together with glucose or butter (placing a small saucepan with a handle over a larger pot containing hot water) and stir continuously until the chocolate is completely melted; the glaze is ready.
Now take the cookies one by one and dip half of each cookie in the chocolate, placing it to dry on a baking sheet lined with parchment paper.
Proceed the same way with all the cookies.
Once you’ve finished, let them dry for a few hours at room temperature (the cookies should never go in the fridge).
