Linguine with cherry tomatoes, olives, and capers.

Simple, quick, very tasty.

Linguine with cherry tomatoes, olives, and capers is a very simple and quick dish to prepare, requiring very few ingredients, but when combined together they create a special dish with a unique goodness. A perfect dish for the whole family, but also if you have friends over for dinner, try them and in their simplicity, they will win you over at the first taste.

Ingredients

  • 14 oz linguine
  • 18 oz cherry tomatoes (I mixed yellow and red)
  • 5 oz pitted olives (of good quality, like Taggiasca, Gaeta, etc…)
  • 0.7 oz salted capers
  • 1 onion (not too large, or half)
  • 1 clove garlic
  • to taste chili pepper
  • 3 leaves basil
  • to taste extra virgin olive oil
  • to taste salt
  • to taste pepper

Steps

  • Rinse the cherry tomatoes and cut them in half.


    Put a pot with plenty of water on the stove to cook the linguine.


    Peel and finely chop the onion, peel the garlic as well, remove the central core, and chop it.

    Cut the olives into 3 parts (if using olives with pits, remove the pits first).

    Rinse the capers to remove the salt in which they are preserved.

  • Pour a generous drizzle of oil into a large pan and add the onion and garlic, chili pepper to taste, the olives, and capers; as soon as the onion becomes transparent, add the cherry tomatoes, cover with a lid, and let them wilt by cooking them quickly.

  • Once the cherry tomatoes are cooked, adjust the salt, add a grind of pepper, and turn off the heat.

    Cook the linguine in the salted boiling water al dente (2 minutes less than the time indicated on the package).


    Turn the flame back on under the cherry tomatoes.


    Pick up the linguine with tongs and add them to the cherry tomatoes, add a few tablespoons of pasta cooking water and stir for a minute to complete the cooking of the pasta by stirring continuously.


    The pasta should remain al dente, at this point turn off the heat, add the torn basil, stir and serve.
