The Meatloaf stuffed with spinach and cheese is a very flavorful and scenic main course perfect for special occasions, holidays, or Sunday lunch, a simple dish to prepare that will impress your guests 🙂
This meatloaf is juicy and savory and has a filling of spinach, provola cheese, and ham that makes it even more delicious, try it, it will win you over at first bite.

Ingredients
- 21 oz ground beef
- 10.5 oz ground pork
- 3.5 tbsp white wine
- 14 oz spinach (or 500 frozen)
- 3 oz bread crumbs
- 2 eggs
- 7 oz grated Parmesan cheese (or half Parmesan and half Pecorino)
- 3.5 oz cooked ham (optional)
- 8.8 oz smoked provola cheese
- 1 clove garlic
- as needed breadcrumbs
- as needed extra virgin olive oil
- as needed salt
- as needed pepper

Steps
First, let’s cook the spinach for the filling: place a clove of garlic in a pan with a drizzle of oil and heat it for a moment, then add the cleaned and rinsed spinach, or frozen ones.
Add salt and cook the spinach quickly until the cooking liquid is well reduced.
Prepare the meatloaf mixture:
Soak the bread in water and squeeze it well.
Place the meat in a bowl, add the wine and mix, also add the squeezed bread, eggs, grated cheese, salt, a nice grind of pepper, chopped parsley if you like, and mix everything until you obtain a homogeneous mixture.
Slice the smoked provola cheese.
Preheat the oven to 375°F.Let’s prepare the meatloaf.
Put some parchment paper on a surface, spread the meat into an even layer, forming a rectangle about 13.8 inches by 9.8 inches.
Fill with cooked ham, which you’ll place all over the surface, a light sprinkle of breadcrumbs, arrange the spinach, and the sliced provola cheese, roll the meat onto itself and form the meatloaf.
Compact it with your hands and roll it in breadcrumbs.
Wrap the meatloaf in parchment paper, place it in a baking dish, and bake at 375°F for 40 minutes, at this point carefully remove the parchment paper to avoid burning yourself and continue cooking for another 20 minutes, until it is golden brown.
Serve immediately.
