Mediterranean Cod.

Simple, juicy, and very flavorful.

The Mediterranean cod is a very simple dish to prepare, delicious and very flavorful, with its succulent sauce flavored with olives and capers will win everyone over at the first taste.

This recipe is from my mom, I recommend preparing the Mediterranean cod as she makes it, you’ll see it’s very tasty and you’ll win everyone over 🙂

Ingredients

  • 4 cod fillets (8 if they are small)
  • 4.23 oz pitted olives (of good quality)
  • 1 tbsp capers in salt
  • 14.11 oz cherry tomatoes (mom adds some yellow cherry tomatoes, you can also use only the red ones)
  • 0.3 cup tomato sauce
  • 1 golden onion
  • 1 clove garlic (use 2 if you like)
  • to taste chili pepper
  • to taste extra virgin olive oil
  • to taste salt
  • to taste pepper
  • Some sprigs parsley

Tools

  • 1 Frying Pan
  • 1 Cutting Board
  • 1 Lid
  • 1 Knife

Steps

  • If using frozen cod, take it out of the freezer about half an hour before.
    Peel the onion and garlic clove and chop both.


    Rinse the cherry tomatoes and cut them in half, or into six parts if large, set aside.
    Rinse the capers well to remove the salt in which they are preserved.

    In a large pan, place some oil, add the chopped garlic and onion, chili pepper to taste and let them flavor for a minute, add the olives, capers, let them flavor further, then add the cherry tomatoes, the tomato sauce, and 20 ml of water, cook on low heat until the tomatoes wilt.

  • Now add the cod fillets, adjust the salt, add a grind of pepper, cover with a lid, and cook for 5 minutes on medium-low heat.

    Gently turn the cod over to the other side, cover with the lid, and cook for another 5 minutes.

    Meanwhile, chop some parsley.

    At this point, remove the lid, raise the heat and let the sauce dry by shaking the pan often.

    Check the salt and add the chopped parsley.

    As soon as the sauce is creamy, everything is ready.

    Serve immediately.

  • Plate the fish along with its sauce.
