Mediterranean Gratin Chicken

Mediterranean Gratin Chicken is a main course that’s simple to prepare, tasty, and flavorful. A main course complete with a side that will make everyone happy with very little effort. It’s very simple to prepare, just gather all the ingredients, add this special breading, put it all in the oven and it’s done, try it, it’s a really great dish that will win you over at the first bite.

Ingredients

  • 1.5 lbs chicken breast (in one piece)
  • 3 potatoes
  • 12 cherry tomatoes
  • Half tablespoon capers
  • 4.2 oz black olives
  • 3.5 oz breadcrumbs
  • 2 tablespoons grated Parmesan cheese
  • to taste herbs (thyme, marjoram, sage, rosemary)
  • 1 teaspoon onion powder
  • to taste extra virgin olive oil
  • to taste salt
  • to taste pepper

  • 1 Blender

Steps

  • Peel the potatoes, cut them into wedges, put them in a pot, cover with plenty of water, add salt and bring to a boil over high heat covered with a lid.

    While the potatoes are blanching, prepare the ingredients that will be needed for the recipe.

    Rinse the cherry tomatoes and cut them in half.

    Rinse the capers well to remove all the salt in which they are preserved.

    Place the breadcrumbs in a blender, add the herbs (I put half a sage leaf, some thyme, marjoram, and a few rosemary needles) and blend everything until it becomes a powder.

    Put the breadcrumbs in a bowl, add a little onion powder, a grind of pepper, and a pinch of salt.

    Remove any bones from the chicken and cut it into bite-sized pieces, not too large and all the same size.

  • Preheat the oven to 350°F.

    Oil a large baking pan.

    Drain the potatoes and put them in a large bowl, add the chicken pieces, olives, capers, and cherry tomatoes, season lightly with salt, add a grind of pepper, and a generous drizzle of oil, mix everything to season both the chicken and the potatoes well.

    Add the breadcrumb mixture and mix everything well to coat the ingredients evenly.

  • Spread the chicken and potato mixture evenly in the baking pan, cover with the remaining breading, and drizzle with a little oil.


    Bake in the lower middle part of the preheated oven at 350°F for about 35 minutes, the potatoes and chicken should cook and brown on the surface.


    Serve immediately.
