Mom’s fried pasta is a quick and easy recipe, as we say here in Naples; one of those perfect dishes for a quick and informal lunch or a spaghetti night with friends. It’s one of those dishes that, by the time the pasta is cooked, is ready to serve and it’s amazingly delicious. Try it, and you’ll see it will win you over at the first taste.

This recipe is from my mom; whenever she didn’t know what to cook, she would prepare her fried pasta for everyone’s delight 🙂

Ingredients

  • 14 oz spaghetti
  • 4 oz Black olives (Pitted)
  • 6 sun-dried tomatoes in oil
  • 3 cloves garlic
  • 3 oz anchovies in oil (Weighed after being drained)
  • to taste Parsley
  • to taste extra virgin olive oil
  • to taste pepper
  • to taste salt
  • to taste chili pepper

Steps

  • Put a pot with plenty of water on the stove to cook the spaghetti.

    Chop the olives and cut the sun-dried tomatoes.

    Peel the garlic cloves, remove the core, and chop them not too finely.

    Chop some parsley and set it aside.

    Take a large pan, add a generous drizzle of oil, garlic, anchovies, chili pepper to taste (you can skip it if you don’t like it or if there are children), and a grind of pepper. Turn the heat to low and let it sizzle until the anchovies melt with the help of a wooden spoon. Add the olives and sun-dried tomatoes, let it flavor briefly, turn off the heat, and add the chopped parsley.

    Cook the spaghetti in boiling water for two minutes less than indicated on the package, lightly salting the water (the sauce is already very flavorful).

    As soon as the spaghetti is ready, lift it with tongs and transfer it directly to the sauce. Add some pasta cooking water and complete the cooking for another two minutes, stirring to flavor everything.
