Neapolitan Salt Cod Fritters, also known as salt cod zeppole.

Neapolitan salt cod fritters are delightful salt cod fritters that are very easy to prepare and delicious to eat. The only problem is they are like cherries, one leads to another 😊 perfect as an appetizer, as a tasty dinner or for an aperitif, try them, they will conquer you at the first taste.

They cannot be missing from your Christmas Eve dinner or New Year’s Eve party.

Ingredients

  • 7 oz desalted salt cod
  • 2.5 cups flour
  • 3/4 cup sparkling water
  • 1 tsp salt
  • 0.28 oz fresh brewer's yeast
  • to taste pepper
  • 1 pinch sugar
  • as needed peanut oil

Steps

  • The salt cod should be already soaked, find HERE how to do it.

    Take the salt cod and place it in a saucepan, cover it with plenty of water and cook it for 15 minutes from boiling.

    Remove the cooked salt cod from the cooking water, remove the skin and bones, and shred it.

    Chop some parsley.

  • Put 3/4 cup of sparkling water in a large bowl, add the sugar and crumbled fresh brewer’s yeast, dissolve it with the help of a spoon or your hands. You can also use a stand mixer with the paddle attachment.

    As soon as the yeast is dissolved, add the flour and knead until you get a stiff and homogeneous batter, like pizza dough, so if you need a little more water or flour, add it.

    Add the salt and parsley, a grind of pepper, and knead again. If you are using a stand mixer, now turn it off and use a spatula to incorporate the salt cod, mix well to combine.

    Cover with a cloth and let rise for about 3 hours, or until the dough has more than doubled.

  • As soon as the dough is ready, heat peanut oil in a frying pan and bring it to temperature (356°F), test with a piece of dough; it should form bubbles immediately and float.

    Take a spoon, quickly dip it into the hot oil, then take a bit of dough and use another spoon to help you make a slightly elongated small ball of dough, drop it immediately into the hot oil.

    Fry the fritters a few at a time, browning them on both sides over low heat. As they are cooked, place them to dry on a sheet of paper towel.

    Serve hot with a grind of pepper and, if you like, a sprinkle of salt.

    The salt cod fritters are ready to be served… Enjoy your meal!

  • Take the already soaked salt cod and place it in a saucepan, cover it with plenty of water and cook it for 15 minutes from boiling.

    Put 3/4 cup of sparkling water in the bowl, add the sugar and crumbled fresh brewer’s yeast 10 sec/speed 3.

    Add the flour 30 sec/speed 3.

    Add the salt and parsley, a grind of pepper 40 sec/counterclockwise.

    Turn off the Thermomix, transfer the dough to a large bowl, and use a spatula to incorporate the salt cod, mixing well.

    Cover with a cloth and let rise for about 3 hours, or until the dough has more than doubled.

    At the end of rising, fry the fritters as indicated above.
