No Scale Cake Mix for a Thousand Cakes.
Quick, simple, super versatile.
The No Scale Cake Mix for a Thousand Cakes is a perfect base recipe for many sweet preparations; it mixes in 5 minutes with electric beaters and can be enriched as you like 🙂 fruit, chocolate, creams, whatever your imagination suggests, resulting in a very soft cake like few others, moist and uniquely delicious.
The unit of measure to be used is the white plastic water cup.

Ingredients
- 3 large eggs (at room temperature)
- 1 cup sugar (170 g)
- 2 cups and a half of all-purpose flour (290 g)
- Half cup potato starch (60 g)
- 1 cup corn oil (180 ml)
- 1 cup milk (at room temperature 190 ml)
- zest of one lemon (untreated)
- 1 tablespoon vanilla extract
- 1 packet baking powder (16 g)
- 1 pinch salt
- your choice (apples, chocolate chips, cocoa, raisins, chopped walnuts, etc…)

- 1 Electric Hand Mixer
- 1 Bowl
- 1 Spatula
- 1 Bundt Pan
Steps
With electric beaters or a stand mixer, beat the eggs with the sugar, a pinch of salt, lemon zest, and vanilla.
Sift the flour with the potato starch and baking powder.
Add the oil and milk to the eggs while continuing to beat.
Gradually fold the flour mixture into the egg mixture with a spatula, using a gentle folding motion from bottom to top.
The No Scale Cake Mix for a Thousand Cakes is ready.
These quantities are for a 9.5-inch bundt pan or a 8.5-inch round cake pan.
The cake bakes in a preheated oven at 350°F for about 45 minutes; after 35 minutes, you can start testing with a skewer.

HOW TO ENRICH THE DOUGH.
As I mentioned, this dough can be enriched and made more delicious as you like; here are some variations:
You can add 3 large apples to make a wholesome apple cake.
One cup of chocolate chips (frozen and floured) for a chocolate chip cake. You can also add 2 pears for a pear and chocolate cake.
One cup of walnut halves, then chopped for a walnut cake. You can also add apples for an apple walnut cake.
Divide the dough and add 3 tablespoons of cocoa to a small part for a chocolate-marbled cake, 4 tablespoons for a two-tone cake.
One cup of raisins (rinsed and floured) for a raisin cake.
You can replace the milk with room-temperature yogurt.
You can replace the milk with orange juice for an orange cake; also add lots of grated orange zest.
You can replace potato starch with cocoa for a chocolate cake.
You can replace 1 cup of flour with 1 cup of grated coconut for a coconut cake.
You can replace the sugar with brown sugar for a more rustic result. Add a teaspoon of cinnamon or ginger powder, or both for a spiced flavor.
You can replace the milk with soy, rice, or oat milk.
You can replace the milk with pineapple juice and add pineapple chunks for a pineapple cake.
You can halve the sugar for a less sweet cake.
You can add diced strawberries, pitted cherries, or your favorite fresh diced fruit; it should be floured first.
You can add syrup-soaked cherries to the batter or all syrupy fruit; if too large, it should be diced and always floured.
You can sprinkle granulated sugar at the bottom of the greased pan, then arrange pineapple slices and pour the batter over for an upside-down pineapple cake. You can do the same with orange slices.
You can add 1 cup of candied fruit.
You can add 2 diced pears to the batter or arrange them on top.
You can add spoonfuls of Nutella on the surface (add a little less milk to the batter in this case, half a cup).
You can add spoonfuls of jam on the surface (also use half a cup of milk in the batter instead of 1).
You can add spoonfuls of custard or chocolate custard (also use half a cup of milk in the batter instead of 1).
You can add one cup of a mix of chopped nuts.
You can replace 1 cup of flour with 1 cup of hazelnut flour. Also add cocoa.
You can replace 1 cup of flour with 1 cup of almond flour. Also add cocoa.
You can bake it plain or with sugar granules on the surface.
You can bake it plain and fill it once cooled with custard, mascarpone cream, chocolate cream, Nutella, jam, or whatever you prefer; you can soak it or not.

Put in the bowl, the eggs with the sugar, a pinch of salt, lemon zest, vanilla 40 secvel 4.
Add the oil and milk 30 sec./ vel 4.
Add the flour, potato starch, and baking powder to the egg mixture 35 sec. / vel. 3.
Scrape the mixture from the sides toward the center and work for another 20 sec. vel. 3.
