Orecchiette with sausage and broccoli rabe is a very simple dish to prepare, quick and very tasty, a perfect dish for the cold months that will make the whole family happy with very little effort.
This recipe is my mom’s, I recommend trying it, it’s really delicious 🙂 Instead of broccoli rabe, you can also use broccoli, Brussels sprouts, Romanesco broccoli…

Ingredients
- 18 oz orecchiette (preferably fresh)
- 1.75 lbs broccoli rabe
- 9 oz sausage
- 1 onion
- 2 cloves garlic
- 2.5 oz grated Parmesan cheese
- to taste chili pepper (you can omit it if there are children)
- to taste extra virgin olive oil
- to taste black pepper
- to taste salt

Steps
Clean the broccoli rabe, remove the spoiled leaves and the thick, hard stems, rinse them well several times in plenty of water. Cut them into pieces with a knife.
Remove the sausage casing and crumble it.
Peel the onion and chop it finely. Also peel the garlic cloves, remove the central core, and chop them.
In a large pan, add some oil (a bit more than usual), add the chopped onion and garlic, and chili pepper to taste, heat for a moment, as soon as bubbles start, add the crumbled sausage, cook everything over low heat, stirring often.
Once everything is browned, add the cleaned broccoli rabe along with 2 tablespoons of water, salt, cover with a lid and cook on very low heat until the broccoli rabe is well cooked (add a little more hot water if needed).
While the broccoli rabe is cooking, put the pot with salted water on the stove to cook the pasta.
Once the broccoli rabe is cooked, check for salt and add a pinch of pepper.
Once boiling, cook the orecchiette 1 minute less than indicated on the package.
Drain the pasta using a slotted spoon and add it directly to the sauce, add the grated cheese and toss for a minute, adding a little pasta cooking water if needed to get a creamy dish.
