Pan-fried potatoes with butter.
Simple, quick, tasty.
These buttered pan-fried potatoes are a very easy side dish to prepare, delicious and flavorful, a dish ready in no time and with very little effort, and everyone loves potatoes, imagine them combined with butter which makes them even tastier. Perfect to accompany any kind of main dish, be it meat, sausage, fish, cheese, they are also great as a standalone dish.

Ingredients
- 2.2 lbs yellow potatoes
- 1 clove garlic
- Half teaspoon roast seasoning
- 4 tbsp butter
- to taste rosemary
- to taste extra virgin olive oil
- to taste salt
- to taste pepper

Steps
Wash the potatoes well, peel them and cut them into wedges, slices, or chunks (I cut them into chunks), rinse them well under running water to remove the starch and dry them well with a clean tea towel.
Place the potatoes in a bowl and season them with a drizzle of oil, a tablespoon of vinegar, and mix, also add the roast seasoning, rosemary, 1 peeled and crushed garlic clove, salt (don’t overdo it, seasonings are salty), a grind of pepper and mix again.
Take a large frying pan and heat it over medium heat (the secret to having crispy potatoes on the outside and soft on the inside in this recipe is to place them in a large, thick-bottomed pan and not too crowded).
As soon as the pan is hot, add the potatoes and brown them on both sides over high heat, as soon as they are browned (it will take about 5 minutes), lower the heat to minimum and cover with a lid (after browning, I transfer them to the small coffee flame and cook them there on medium heat), continue cooking, shaking the pan occasionally and stirring them with a wooden spatula very few times to avoid crumbling them, the potatoes should cook for about 25 minutes, at this point remove the garlic and taste to check the cooking, the potatoes should be crispy on the outside and soft on the inside, if they need further cooking, continue for a few more minutes.
As soon as the potatoes are cooked, add the butter in small pieces scattered here and there and cook for another 5 minutes, shaking the pan frequently to flavor all the potatoes with the butter and thus making them golden evenly.
