Pasta with garlic, oil, chili and anchovies, the Roman dish cooked as grandma demands.

Pasta with garlic, oil, chili and anchovies is a super quick first course, one of those extremely simple, fast and very tasty dishes that save lunch in just a few minutes.

This dish is typical of Roman cuisine, but this is my Neapolitan grandma’s version 🙂 try it, it will win you over at the first bite.

Now everyone to the stove! Today we prepare linguine with garlic, oil, chili and anchovies — a very simple dish and with the video recipe below it will be even easier.

Ingredients

  • 14 oz linguine (or spaghetti)
  • to taste extra virgin olive oil
  • 8 fillets anchovy fillets in oil
  • 4 cloves garlic
  • to taste chili pepper
  • to taste salt
  • to taste chopped parsley

  • 1 Pot
  • 1 Tongs

Steps

  • Preparing pasta with garlic, oil, chili and anchovies is very simple.

    First, put a pot with plenty of water on the stove to cook the pasta.

    In the meantime, peel and coarsely chop the garlic cloves; you can also leave them whole if you want a milder garlic flavor, or remove the central sprout for a less intense taste.

    Place a large frying pan on the stove and add a generous splash of oil, add the garlic, chili to taste and the anchovy fillets. Keep the heat low and stir until the anchovies dissolve and the garlic turns slightly golden (be careful not to burn it, or you’ll ruin the dish).

  • Turn off the heat as soon as the sauce is ready.

    Cook the pasta in the boiling water and set the timer (you can add a little salt).

    When there are 4 minutes left of the time indicated on the package, turn the heat back on under the sauce, use tongs to lift the linguine out of the water and transfer them to the pan with the sauce. Add a ladleful of pasta cooking water and continue cooking the pasta stirring continuously and adding pasta water if necessary until it reaches an al dente texture.

    Finally add some chopped parsley and serve immediately.
