The pasta with zucchini, cherry tomatoes, arugula, and tuna is a very simple dish to prepare, quick and extremely delicious, a mix of ingredients that come together creating a dish that will win you over at the first taste.

Perfect for any occasion, this is one of those dishes I recommend you try.

Ingredients

  • 14 oz pasta (such as elicoidali, mezzi rigatoni, penne, rigatoni, farfalle, caserecce, etc…)
  • 3 zucchini
  • 2 oz arugula
  • 5.6 oz tuna in oil
  • 7 oz cherry tomatoes
  • 1 onion
  • 1.8 oz grated Parmesan cheese (you can also skip it)
  • to taste extra virgin olive oil
  • to taste salt
  • to taste pepper
  • to taste chili pepper (you can also skip it)

  • 1 Knife
  • 1 Cutting Board
  • 1 Skimmer
  • 1 Wooden Spoon

Steps

  • Wash the zucchini well, remove the two ends, and cut them into small cubes or slices.

    Peel the onion and chop it finely.

    Rinse the cherry tomatoes and cut them into halves or quarters.

    Rinse the arugula, cut it into 2 or 3 parts, and keep it in a bowl covered with running water.

    Put a pot of salted water on the stove over the lowest heat to cook the pasta.

    Put some oil in a large pan (a little more than you usually use for sauce), add the onion and zucchini, and cook everything over high heat, stirring often, lightly salt (remember there will be Parmesan and tuna).

    Add a grind of pepper and a bit of chili pepper (if you like), once the zucchini are cooked and slightly golden add the cherry tomatoes, cook them quickly.

    Add the drained and chopped arugula, stir and turn off the heat, add the drained tuna.

  • Cook the pasta in boiling salted water one minute less than the time indicated on the package.

    At the end of cooking, set aside some cooking water.

    Drain the pasta and immediately add it to the zucchini, cherry tomato, arugula, and tuna sauce which you will have put back on the heat in the meantime.

    Add some of the pasta cooking water and stir, turn off the heat and also add the Parmesan, mix continuously, adding a bit of cooking water as needed to create a creamy sauce with the dressing, plate and serve immediately.
