Pasta with zucchini, shrimp, and arugula.

Pasta with zucchini, shrimp, and arugula is a very simple and quick first course to prepare, a harmony of flavors that blend perfectly together, creating a very tasty dish. A perfect dish for any occasion and for the whole family, try it, it will win you over at the first taste 🙂

Ingredients
- 14 oz penne (or any pasta shape like casarecce, tortiglioni, rigatoni, fusilli, etc…)
- 3 zucchini (medium)
- 6 cherry tomatoes
- 1 onion
- 2 cups arugula
- 8 oz shrimp tails
- 1 oz grated Parmesan cheese (you can leave it out if you prefer)
- to taste extra virgin olive oil
- to taste salt
- to taste pepper

- 1 Wooden spoon
Steps
Wash the zucchini well, remove both ends, and dice them.
Peel the onion and chop it.
Cut the cherry tomatoes in half, or into quarters.
Rinse the arugula well, tear it apart, and set it aside.
Put a pot with plenty of water on the stove to cook the pasta.
Put a drizzle of oil in a large frying pan, add the onion and let it caramelize for a moment, add the zucchini, a pinch of salt, stir, and let everything lightly brown over medium heat, stirring often (zucchini tend to burn easily).
As soon as everything is lightly browned, add the cherry tomatoes, 3 tablespoons of hot water (you can take it from the pot on the stove for the pasta), cover with a lid and let cook for a few minutes over low heat.
As soon as the water for the pasta reaches a boil, salt it and add the pasta, cooking it 2 minutes less than the time indicated on the package.
While the pasta cooks, complete the sauce by adding the shrimp, cook a few more minutes, add the torn arugula, adjust the salt, add a grind of pepper, stir, and keep on very low heat.
Meanwhile, the pasta will be cooked, reserve a little cooking water, then drain it and add it to the sauce, add a bit of the pasta cooking water as needed and stir for a minute over medium heat.
Turn off the heat, wait a minute while stirring, then add the Parmesan and stir to mix the pasta with the Parmesan and the rest of the seasoning, plate and serve immediately.
