Penne with tomato and gorgonzola.

Penne with tomato and gorgonzola is a very simple first course to prepare, rich, creamy, tasty and so flavorful, a dish that I recommend you try, you’ll see it will win you over at the first taste and it is perfect even if you have guests.

Ingredients
- 14 oz penne (or any pasta shape you like)
- 7 oz gorgonzola
- 2/3 cup tomato passata
- 5 oz cherry tomatoes (or peeled tomatoes)
- 1 onion
- 1/2 cup grated Parmesan cheese
- to taste extra virgin olive oil
- to taste salt
- to taste pepper

Steps
Put a large pot with plenty of salted water to cook the pasta on low heat.
Peel and finely chop the onion.
Wash the cherry tomatoes well and cut them in half.
Put some oil in a large pan, add the onion and let it slightly brown over very low heat (be careful not to burn it), as soon as the onion starts to brown add the passata and cherry tomatoes, cook everything over high heat for a few minutes, the tomatoes should be cooked but remain nice and firm, lightly salt.
Turn off the heat and add the gorgonzola cut into chunks, as soon as the gorgonzola is almost melted (it’s okay if it melts slightly, it will finish melting with the heat of the pasta) turn off the heat, add a grind of pepper.
Cook the penne in the boiling salted water, as soon as there are a couple of minutes left from the cooking time indicated on the package, use a slotted spoon to transfer them directly into the tomato and gorgonzola sauce, turn the heat to low, add a few tablespoons of pasta cooking water and the grated cheese, stir and blend for a few minutes to mix everything well.
Serve immediately.
