Ingredients
- 4 large red and yellow peppers (about 2.2 lbs)
- 2 onions
- to taste extra virgin olive oil
- to taste salt
- to taste pepper
Tools
- 1 Pan
- 1 Cooking Spatula
- 1 Knife
- 1 Cutting Board
Steps
Peel the onions and slice them.
Wash the peppers well, dry them, and clean them by removing the cap to which the stem is attached, all the seeds inside, and the white filaments. Cut them into strips (as I did) or into pieces about 0.8 inches wide.
Put the onion in a large pan over low heat with some oil, and let them soften by stirring often. As soon as the onion is stewed, add the peppers, stir, cover with a lid, and cook for about 10 minutes over medium heat, stirring occasionally.
After 10 minutes, adjust the salt, add a dash of pepper, a tablespoon of vinegar (this helps make them more digestible), and continue cooking over low heat with the lid on until the peppers are done.
At the end of cooking, check the salt and serve.
Peppers and onions in a pan are ready to be enjoyed. Bon appétit!
