Ingredients

  • 2 eggs
  • 3 1/4 cups all-purpose flour
  • 3/4 cups sugar
  • 1/2 cups corn oil
  • grated zest of one untreated lemon
  • 1 tsp baking powder
  • 1 tbsp vanilla extract
  • 1 pinch salt
  • 1 1/2 cups jam of your choice

Steps

  • Sift the flour together with the baking powder.

    Place the eggs in a large bowl, add the oil and mix, add the sugar, grated lemon zest, pinch of salt, vanilla, and mix, then slowly add the sifted dry ingredients and knead until you get a dough ball, you can also work the dough in the order indicated but using a stand mixer with the K-beater attachment.

    Transfer the dough to a pastry board and knead until you get a smooth and homogeneous dough (if it sticks to your hands, add a bit more flour).

    The oil-based shortcrust is ready, it doesn’t need to rest in the fridge.

  • Grease a 9.4-inch tart pan.

    Preheat the oven to 338°F static.

    Roll out 3/4 of the shortcrust on the slightly floured board, aiming for a large circle, and with the help of a rolling pin, place the obtained circle in the pan and cover it entirely with the pastry, including the edges, trim off any excess pastry.

    Fill the tart with jam, spreading it in an even layer.

    Lightly work the remaining shortcrust and roll it out with the rolling pin into a rectangle about 3/16 inches thick, and with a pastry wheel, cut it into strips.

    Decorate the tart with the strips, then with the wheel, trim off the excess pastry from the edges.

    Bake the freshly prepared tart in the lower part of the oven (just above the base) at 338°F for about 30 minutes, until golden.

    Add the oil, sugar, grated lemon zest, pinch of salt, vanilla 30 sec.Speed 2.

    Also add the flour and baking powder and knead 3 minutesKnead.

    Transfer the dough to a pastry board and knead until you get a smooth and homogeneous dough (if it sticks to your hands, add a bit more flour).
