Grandma’s potato soup.
Simple, comforting, delicious.
Grandma’s potato soup is a typical dish of rural tradition, very simple to prepare, economical, and delicious. A nutritious dish that comforts and warms on cold winter days.
This potato soup recipe is typical of traditional Italian cuisine, and this is my grandma’s ancient recipe 🙂

Ingredients
- 1.5 lbs potatoes
- 2 cups short pasta (or preferred short pasta shape)
- 2 tbsp tomato puree
- 1 carrot
- 1 onion (large)
- 1 stalk celery
- 1 sprig rosemary
- 1 parmesan rind
- to taste extra virgin olive oil
- to taste salt
- to taste pepper
- 1/2 cup grated Parmesan cheese

Steps
Wash the potatoes well, peel them, and cut into cubes about half an inch on each side.
Peel and chop the onion, clean the celery and chop it, wash and peel the carrot and cut it into very small cubes.Scrape the rind of the Parmesan from the side of the crust and cut it into pieces.
Put a generous drizzle of oil in a large casserole, add the chopped celery, carrot, and onion, also add the sprig of rosemary, lightly stew the onion by stirring often and add the potato cubes.
Sauté over high heat, salt, add a grind of pepper, and water to cover the potatoes plus an additional 2 inches, also add the puree and Parmesan rinds and cook on low heat covered with a lid for 25 minutes (remove the rosemary halfway through cooking).Once the cooking time has passed, mash some potatoes with the back of a wooden spoon, let cook for another 5 minutes.
After the potato cooking time, check if the water is enough to cook the pasta while keeping it creamy, otherwise add a little more, bring back to a boil and add the pasta, cook for two minutes less than the cooking time indicated on the package.
Adjust salt and check pasta cooking.
As soon as the pasta is al dente turn off the heat and add the grated cheese, stir, cover with a lid and let rest for a minute.
Serve immediately.
