The quick apple cake is a very simple and quick dessert to prepare; it mixes in 5 minutes and results in a very soft, moist, fragrant, and delicious cake with a batter rich in many apples. A perfect dessert for the whole family that wins everyone over at the first taste.

Ingredients

  • 3 large eggs (at room temperature)
  • 2 cups all-purpose flour
  • 3/4 cup sugar (1/2 cup for a less sweet version)
  • 1/3 cup cornstarch
  • 1/3 cup corn oil
  • grated zest of one untreated lemon
  • juice of half a lemon
  • 2 tablespoons rum
  • 1 teaspoon ground cinnamon
  • 1 packet baking powder (16 g)
  • 1 pinch salt
  • 3 apples

Tools

  • 1 Bundt Cake Pan
  • 1 Spatula
  • 1 Oven

Steps

  • Butter and flour a 24 cm bundt cake pan.

    Peel one apple and cut it into cubes, place it in a bowl with the lemon juice.

    Preheat the oven to 340°F.

    Sift the flour together with the baking powder and cornstarch.

    Put the eggs and sugar in a bowl and beat with an electric whisk for 4 minutes at maximum speed (you can also use a stand mixer).

  • Once well beaten, add the oil, a pinch of salt, the grated lemon zest, the liquor, the cinnamon (you can also omit it), and the milk; quickly mix with the electric whisk until you have a homogeneous mixture.


    Add the flour mixture and mix with the whisk until you get a smooth and homogeneous mixture, remove the whisk, add the diced apple with the juice, and mix with a spatula.


    Remove the core from the other 2 apples and cut them into slices about 1/8″ thick.

  • Pour the mixture into the mold, place the apple slices on the surface, sinking them halfway into the batter, sprinkle with sugar.

    Bake in a preheated oven at 340°F for about 40 minutes; check the center with a toothpick; it should come out dry.

    Let it cool, then place the quick apple cake on a tray.

  • Butter and flour a 24 cm bundt cake pan.

    Peel one apple and cut it into cubes, place it in a bowl with the lemon juice.

    Put the eggs with the sugar in the bowl 30 sec. /Speed 3.

  • Add the pinch of salt, oil, the lemon zest, cinnamon, and liquor (you can also omit them) and milk in the bowl 30 sec/ Speed 3.

    Spatula, add the flour mixture and the baking powder 30/ sec/ Speed 3. Spatula, gathering the dough from the edges to the center, and work another 30 sec /Speed 3.

    Turn off the Bimby and add the diced apple with the juice and mix with a spatula.

    Remove the core from the other 2 apples and cut them into slices about 1/8″ thick.

  • Pour the mixture into the mold, place the apple slices on the surface, sinking them halfway into the batter, sprinkle with sugar.

    Bake in a preheated oven at 340°F for about 40 minutes; check the center with a toothpick; it should come out dry.


    Let it cool, then place the quick apple cake on a tray.
