Roasted new potatoes.
Simple, quick, delicious.
Roasted new potatoes are a very simple side dish to prepare, tasty and extremely flavorful. This is my grandmother’s recipe, and in no time you’ll have small potatoes with a wonderful crust and soft inside, with plenty of herbs making them fragrant and even tastier.
Roasted new potatoes are perfect to accompany meat or fish main courses, as well as eggs, cheeses, or cold cuts; perfect for any occasion and for the whole family, even kids will love them; an extra idea 😉 slightly mash them and use them for an omelet by adding beaten eggs with grated Parmesan and see how delicious they are.

Ingredients
- 2.2 lbs new potatoes
- 1 tsp roast seasoning
- to taste herbs (rosemary, marjoram, sage)
- 1 clove garlic
- 0.7 oz butter (optional)
- 1 tbsp vinegar
- to taste extra virgin olive oil
- to taste salt
- to taste pepper

Steps
Without peeling them, rinse the potatoes well, cleaning them with a food brush if necessary.
Cut the larger ones into 2 or 4 pieces and leave the small ones whole, so they all become more or less the same size.
Rinse the potatoes well again, then place them in a large pot, cover them generously with water (it should cover the potatoes by at least 1.5 inches).
Add the tablespoon of vinegar and salt.
Place the pot on the stove and bring to a boil, covered with a lid.
Once boiling, reduce the heat to low and let cook for 8-10 minutes, the potatoes should be al dente.
Once the potatoes are cooked, drain them from the cooking water and place them in a bowl.
Preheat the oven to 392°F fan mode.
Add 2 tablespoons of oil to the potatoes and mix.
Also add the roast seasoning and mix well, then add some torn sage leaves, a bit of marjoram, the garlic clove (crushed and unpeeled), and a few rosemary needles, a grind of pepper, and mix well again.
Grease a large non-stick baking pan with oil and pour the seasoned potatoes into it.
Scatter the butter in small pieces here and there (you can also skip this and add a drizzle of oil).
Bake in the preheated fan oven at 392°F for about 30 minutes, stirring halfway through cooking.
The potatoes are ready as soon as they are beautifully golden.
Serve immediately.
