The Rustic Pie with Potatoes and Sausage is a very simple dish to prepare, tasty and extremely flavorful, it has a puff pastry base filled with pan-fried potatoes and sausage and lots of stretchy scamorza cheese; the filling stays soft inside during cooking, and thanks to the breadcrumbs, you get a delicious crust, a perfect rustic dish as an appetizer or as a main dish for dinner; this savory pie is also delicious cold, so you can serve it at a party buffet or take it to the beach or on a picnic, Easter is coming up soon, and it’s perfect for Easter Monday. 🙂

Ingredients
- 1 roll puff pastry (round)
- 3 large yellow potatoes
- 10.5 oz sausage
- 7 oz scamorza cheese
- Half onion
- 0.42 cup heavy cream (or cooking cream)
- to taste extra virgin olive oil
- to taste salt
- to taste pepper
- to taste breadcrumbs

Steps
Wash the potatoes well, peel them, and cut them into small pieces (about 0.6 inches on each side), then rinse them well under running water to remove the starch and dry them well with a clean cloth.
Peel and slice the onion and set it aside.
Cut the sausage into small pieces as well.
Put the potatoes in a bowl and season them with oil, salt, and a grind of pepper.
Take a large pan and heat it over medium heat; once the pan is nice and hot, add the potatoes in a single layer, and fry them on both sides.
Add the sausage pieces and let them flavor for a moment, shaking the pan often, then add the onion and a bit of water, and cook for about 10-15 minutes covered with a lid; the potatoes should become soft but not fall apart. Once cooked, turn off the heat (you can also cook everything in advance).
Cut the scamorza cheese into cubes.
Preheat the oven to 356°F.
Put the freshly cooked potatoes with sausage in a bowl, add the cream, and mix everything.
Line a 28 cm baking dish with parchment paper.
Unroll the puff pastry and lay it in the dish, scatter the scamorza cubes here and there, and fill it by distributing the cooked potatoes with sausage inside.
Sprinkle with some breadcrumbs (just a sprinkle).
Fold the edges of the pastry towards the filling and bake at 356°F on the lower-middle rack (just above the base) of the oven for about 25 minutes until golden.
Let it rest for a moment out of the oven and serve.
