The sausage and potatoes curry is a very simple dish to prepare, nutritious and flavorful. The potatoes are flavored by the spices, giving them a special and unusual taste, making this dish very delicious. A single dish that combines proteins and carbohydrates cooked together in a pan. Try it, you’ll see how delicious it is 🙂
P.S. Choose a thicker sausage, the thin one would become dry; if you only have the thin ones, add them halfway through cooking.

Ingredients
- 1.4 lbs sausage (cut into 4 pieces)
- 2.2 lbs yellow potatoes
- 1 tbsp curry
- 1 tsp paprika
- 1 tbsp vinegar
- to taste rosemary
- 1 clove garlic
- to taste extra virgin olive oil
- to taste salt
- to taste pepper

Steps
Wash the potatoes well, peel them and cut them into chunks, then rinse them well under running water to remove the starch and dry them well with a clean cloth.
Put the potatoes in a bowl and season with oil and the tablespoon of vinegar, mix well, add the curry, paprika, chopped rosemary, salt, and pepper, and mix again.
Take a large pan and heat it over medium flame (the secret to perfectly cooked and golden potatoes is to arrange them in a large pan with a thick base, not too much one on top of another, this way you’ll also have well-cooked and browned sausage).
Once the pan is hot, add the sausage and potatoes, add the unpeeled garlic clove, brown the sausage on both sides and the potatoes over high heat, once everything is browned (it will take about 5 minutes) lower the heat to minimum and cover with a lid (after browning, I transfer the pan to the small flame, the one used for coffee, and continue cooking over medium heat), continue cooking by shaking the pan occasionally and turning with a wooden spoon very few times, cook for about 30 minutes.
Remove the garlic and taste to check doneness, the sausage should be well browned and the potatoes crispy on the outside and soft inside; if they need to cook a little longer, continue cooking for a few more minutes.
Serve everything very hot, just removed from the heat.
