Shortcrust Pastry for Christmas Cookies.

The shortcrust for Christmas cookies is a special recipe, a bit different from the classic shortcrust in taste, very aromatic and fragrant, a perfect base for delicious Christmas cookies or tarts. Try it and you’ll see it melts in your mouth and has a really special taste.

Ingredients
- 2 3/4 cups all-purpose flour
- 1/2 cup potato starch
- 3/4 cup butter
- 1 1/4 cups powdered sugar
- 1 egg
- 1 egg yolk
- zest of one organic orange
- zest of one untreated lemon
- 1 tsp honey
- 1 pinch salt
- 1 tsp vanilla extract (Or the seeds of half a pod)

- 1 Pastry Board
- 1 Rolling Pin
- 1 Oven
Steps
Mix together the sugar with sifted flour, potato starch, and sifted baking powder.
Place the mixture in a mound on a pastry board, add diced butter, and start kneading until you get a crumbly mixture.
At this point, make a well in the center, where you will add the eggs, honey, grated orange and lemon zest, vanilla, and a pinch of salt. Knead with your fingertips and then quickly with your hands to form a smooth and homogeneous dough.
Form a ball and place it in a clean cloth or plastic wrap for at least 30 minutes in the fridge.
Place the flour and sugar, potato starch, and baking powder in the bowl for 3 seconds, speed 3.
Add the eggs, honey, grated orange and lemon zest, a pinch of salt for 20 seconds at speed 5.
Place the obtained dough in a clean cloth or plastic wrap for 30 minutes in the fridge.
The shortcrust pastry for Christmas cookies is ready to be rolled out and cut into all your favorite shapes.
The cookies should be baked at 350°F for about 10-15 minutes, but adjust according to your oven and the thickness you rolled them out to, they should be golden.
