Soft Chocolate Cake.
Simple, very soft, delicious.
The soft chocolate cake is one of the simplest, quickest, softest, and most delicious desserts. A moist and very soft base perfect to enjoy alone or with a scoop of vanilla ice cream, but it’s also great as a base for filled cakes.

Ingredients
- 4 large eggs (at room temperature)
- 1 cup sugar (3/4 cup for a less sweet version)
- 1 cup all-purpose flour
- 1/3 cup potato starch
- 1/2 cup unsweetened cocoa powder
- 1/3 cup corn oil
- 9 oz ricotta (at room temperature)
- 1 tablespoon vanilla extract
- 1 pinch salt
- 1 packet baking powder (16 g)

- 1 Stand Mixer
- 1 Pan
- 1 Bowl
- 1 Spatula
- 1 Oven
Steps
Butter a 9-inch pan, preferably springform.
Preheat the oven to 338°F.
Using a stand mixer or electric beaters, beat the eggs with the sugar and a pinch of salt.
Sift the flour with the potato starch, baking powder, and cocoa.
Add the ricotta, vanilla, and oil to the eggs while continuing to beat.
Turn off the mixer and gradually add the flour mixture, folding in with a spatula from bottom to top.
Pour the mixture into the buttered pan.
Bake at 338°F for about 40-45 minutes, checking for doneness with a toothpick.
Let it cool.
Once the soft chocolate cake is cool, place it on a serving plate and dust it with powdered sugar.

Put the sugar in the bowl for 15 seconds/speed 4.
Add the eggs for 30 seconds/speed 4.
Add ricotta, vanilla, a pinch of salt, and oil for 30 seconds/speed 4.
Add the flour, potato starch, cocoa, and baking powder for 50 seconds/speed 6.
Pour the mixture into the buttered pan.
Bake at 338°F for about 40-45 minutes, checking for doneness with a toothpick.
Let it cool.
Once the soft chocolate cake is cool, place it on a serving plate and dust it with powdered sugar.
The soft chocolate cake is ready to be enjoyed… ENJOY YOUR DESSERT!
You can enjoy it alone or with a scoop of vanilla ice cream. You can cut it in half and fill it with Nutella, or with whipped cream and Nutella, pastry cream, chocolate pastry cream, mascarpone cream, yogurt cream or whatever you prefer 🙂
