Spaghetti alla Puttanesca is a traditional Neapolitan dish that is very easy to prepare, quick, economical, and very tasty. It has a sauce rich in flavors with anchovies, capers, and olives that combined create this dish with a special and unmistakable taste.
Spaghetti alla Puttanesca owes its name to the story of its invention. It is said that it was first prepared by a restaurant that at the end of the evening prepared this delicious dish with the ingredients left in the pantry. There are also those who say it was born in brothels, as its colorful name indicates a quick and easy preparation.

Ingredients
- 14 oz spaghetti
- 28 oz peeled tomatoes (Or cherry tomatoes)
- 1 oz anchovies in oil
- 0.5 oz salted capers
- 7 oz black Gaeta olives
- 2 cloves garlic
- A few sprigs parsley
- to taste chili pepper
- to taste extra virgin olive oil
- to taste salt
- to taste pepper

Steps
Rinse the capers to remove the salt they are preserved in and chop them with a knife.
Peel the garlic cloves and remove the central shoot.
Chop some parsley and set it aside.
Crush the peeled tomatoes.
In a large pan, put some oil, garlic, chili pepper, anchovies, chopped capers, and olives (you can also remove the pits if you prefer).
Let everything simmer for a few minutes over low heat, stirring with a wooden spoon.
Add the crushed peeled tomatoes, and a grind of pepper.
Cook the sauce until it is well reduced, covered with a lid, finally check the flavor and adjust slightly with salt if necessary.
While the sauce is cooking, put plenty of water in a tall pot to cook the pasta on the stove.
Cook the spaghetti in salted boiling water one minute less than indicated on the package, use tongs to transfer them directly into the sauce, add the chopped parsley and mix for a minute to flavor the pasta well and blend it with the sauce.
Serve immediately.
