Spiced baked potatoes are a very easy side dish to prepare, tasty and very flavorful. Preparing them is very simple and quick. With the right mix of spices and aromas plus even cooking, you’ll have crispy potatoes on the outside and soft on the inside, extraordinarily delicious.

Ingredients
- 2.2 lbs potatoes (yellow-fleshed)
- 1 teaspoon sweet paprika
- Half teaspoon hot paprika (you can skip it)
- Half teaspoon curry
- Half teaspoon roast spices
- as needed rosemary
- garlic powder (you can skip it)
- as needed salt
- as needed pepper
- as needed extra virgin olive oil

Steps
Wash the potatoes well, peel them, and cut them into wedges or chunks (they should all be roughly the same size for even cooking). Wash them well under running water to remove the starch and dry them well with a clean towel (if I have time, and if you want them crunchier, I recommend doing this: after rinsing, leave them soaking in clean cold water with a tablespoon of vinegar for 30 minutes, then drain and dry them); removing the starch from the potatoes is crucial for crunchiness and to prevent them from sticking together during baking.
Preheat the oven to 392°F (200°C) fan mode.
Place the dry potatoes in a large bowl and season them with oil, a little salt (the roast spices already contain some salt), and a grind of pepper. Mix to ensure the seasoning coats them evenly, then add the spices, aromatics, garlic powder (if you like), and a few rosemary needles. Mix again until the potatoes are evenly coated with spices.
Take a large baking tray, oil it with a drizzle of oil (choose a nice large tray that can hold all the potatoes without overcrowding them, even better if you make a single layer), and arrange the potatoes in it.
Bake at 392°F (200°C) for about 35 minutes, depending on the size of the potato pieces. They should be nicely golden. For excellent cooking and to prevent the potatoes from crumbling, mix them no more than twice during cooking by shaking the tray. I recommend not using wooden spatulas or spoons; mixing them can cause crumbling, especially at the end of cooking.
The spiced baked potatoes are ready when they are golden, crispy on the outside, and soft on the inside.
