The Super Soft Castagnole are traditional Carnival sweets, very easy and quick to make, extremely soft thanks to the ricotta dough, fragrant with citrus and incredibly delicious, one of those sweets that will win you over with its goodness at the first bite.

Ingredients

  • 1 large egg
  • 250 g ricotta
  • 150 g all-purpose flour
  • 1 shot limoncello
  • grated zest of one lemon (untreated)
  • 50 g sugar
  • 6 g baking powder
  • 1 pinch salt
  • as needed peanut oil
  • as needed sugar

Tools

  • 1 Bowl
  • 1 Sieve
  • 1 Pan

Steps

  • In a bowl, sift the ricotta.

    Add the lightly beaten egg, limoncello, grated lemon zest, sugar, and a pinch of salt, mix with a spoon until smooth and creamy.

    Gradually add the sifted flour while continuing to mix.


    Add the sifted baking powder to the mixture and mix again until incorporated and you have a smooth and homogeneous mixture.


    Cover with food wrap and let it rest for 10 minutes in the fridge.

  • Heat a generous amount of oil in a pan.

    Once the oil is hot (340°F), take a small amount of the mixture with a spoon (like a small walnut) and drop it into the hot oil with the help of another spoon.

    Fry the fritters over medium-low heat, turning them often until golden, let them dry on kitchen paper for a moment.

    Roll them while still warm in granulated sugar.

    The super soft Castagnole are ready to be enjoyed.

  • Place the ricotta in the bowl for 20 sec./Speed 2.

    Add the egg, limoncello, grated lemon zest, sugar, and a pinch of salt 30 sec./Speed 2.

    Add the flour and baking powder to the mixture 30 sec./Speed 3.

    Turn off the Thermomix and mix well with a spatula.


    Cover with food wrap and let it rest for 10 minutes in the fridge.
