Tagliatelle with porcini mushrooms are a classic of Italian cuisine, a very simple first course to prepare, fragrant and extremely flavorful, very few ingredients that create a harmony of flavors that will win you over at the first bite.

For the preparation of this dish I used fresh porcini mushrooms, you can also use frozen ones.

Ingredients

  • 14 oz egg tagliatelle
  • 1.3 lbs porcini mushrooms (fresh or frozen)
  • 1 onion
  • 1 clove garlic
  • to taste extra virgin olive oil
  • to taste pepper
  • to taste salt
  • chili pepper (to taste)
  • 1.75 oz grated parmesan cheese (to taste)

    If you use fresh porcini mushrooms, clean them by removing the dirt near the stem with a knife and remove any traces of soil or leaves with a damp cloth.

    Cut the mushrooms into slices or cubes, while the frozen ones should be used while still frozen.


    Chop some parsley and set it aside.

    Peel the garlic clove, remove the central core, and chop it.


    Peel the onion and chop it very finely.

  • Put a pot with plenty of salted water on the stove to cook the tagliatelle and bring it to a boil, then salt it.

    While the water reaches a boil, we can prepare the sauce.

    Take a large skillet and sauté the chopped onion and garlic with a generous drizzle of extra virgin olive oil. You can also add some chili pepper. Once the onion turns transparent, add the mushrooms and cook them over medium heat, cover with a lid, and start cooking on low heat for 3 or 4 minutes. Adjust the salt and add a pinch of pepper.

    Complete the cooking of the mushrooms for about another 10 minutes. They should be soft yet firm. Turn off the heat and add the chopped parsley.

  • Cook the tagliatelle until very al dente.


    With a slotted spoon, place the tagliatelle in the skillet with the mushroom sauce and let them absorb the flavors, mixing over low heat for 1 minute. Add a few tablespoons of the tagliatelle cooking water if needed, and also add the grated cheese (you can also leave them plain), stir for another moment.


    Serve immediately.
